We do not use any ingredients that are full of nasty chemicals or additives & we care about every dish that leaves the kitchen. Great ingredients don’t need to be over complicated; we just love to put honest, seasonal & tasty food on a plate. It might be a canape reception, more formal food, a splendiferously different dessert or afternoon tea, or why not go for Low ‘n’ slow applewood smoked pulled pork, soft flour rolls & homemade sticky BBQ sauce & deli slaw? The choice is endless…. It can be in a posh tent, on the street or at a venue. Leon Smith, Chief Munkey! For 30 years I have been a chef, the last 20yrs as Head or Exec at venues and events such as The Etihad Stadium, The London 2012 Olympics, The Emirates Stadium, Wembley Stadium, Ascot Racecourse, Goodwood Racecourse & Motor Circuit, Chelsea, Hampton Court & Tatton Park Flower Shows, 3 British Open Golf’s & a couple of Welsh Open’s, just to name a few.. What’s your signature dish?

There are many dishes I have created over my career from complex menus for stars, royals and VIP's alike to British favourites like fish and chips. To pick one would be very difficult, I love food that is created simply using quality ingredients without any nasty additives or chemicals.

How do you go about creating the perfect menu for your clients?

To create an amazing menu, we spend time with you talking through the type of event, who will attend and any specific requirements. We will then go away & work our magic before coming back to you with a couple of different options. There are sample menus on our website to give you an idea but remember you can bespoke them. We want to help create a memorable experience.

What do you love most about your job?

Food, food and more food. Food is a language that everyone understands and it helps create special moments. I have worked with food and in all aspects of catering for over 30 years now and never tire of the challenges it can bring. So whether you want a something formal, sweet, smoky, sticky and pulled it's all prepared in the same way.

What inspired you to start your own business?

After many years working for large catering companies I wanted to take all the good things and make them better. It's all about providing quality food to all types of events but also doing it with a conscience. We think food whether meat or plant based should be free from chemicals and harmful additives. We recognise the environment is important and work to reduce plastics and support local producers were possible.
