Penny did some catering for our recent wedding weekend. We had a selection of hot meals on the Friday night and a range of salads for the Saturday night. Penny provided us with an extensive range of options for both, with recommendations that suited us. First of all I find out the clients likes and dislike, their budget, how many course required, if their are any dietary requirements within the party, and get an idea of the kitchen that I will be serving the food out of.
Then I will email the clients 3 menus for approval, taking into account what is seasonal and at its best. From there we can really start to tweak them so the client gets exactly what they want and are happy.
What I love about my job is creating dishes and menus that reflect the time of year. As cooking within the seasons results in some of the most wonderful flavor combinations, such as Venison and Honeyed Root Vegetables, Strawberries and Cream, Wild Salmon and Asparagus. Then the other element I enjoy is the pressure of getting it right, to do justice to the produce and give pleasure to the customer, which is what cooking is all about really.
