What do you love most about your job?

The one thing I love most about my Job has to be the challenge of cooking using an offset smoker. Keeping the temperature steady using wood and charcoal when the weather and outside temperature and humidity can all effect how the smoker performs. It takes hour after hour of practice burns and experimenting with different types of wood and charcoal but the results is some of the most tender and tasty food you will ever eat. When a customer comes back to tell you that your ribs are the best he's ever had it makes all the effort worth it.

What inspired you to start your own business?

A mobile BBQ business wasn't something I had envisaged when I decided to get into catering. It was while searching for a small commercial smoker for a Cafe I was planning to open. By chance I came across the company that built commercial BBQ trailers and I saw a small version of Old smokey on the website. After a discussion with my wife, family and friends I couldn't find anyone who would talk sense into me. Everyone thought it was a fantastic opportunity and a unique business. So everything was set in motion and here I am. Even now it looks odd looking at a steam train sat on my drive. It wasn't the easy option and is really hard work but all the effort is worth it when after hours of tending the BBQ pit all that tender tasty meat finally comes off. And it always smells good too.

Why should our clients choose you?

The food has to be the main reason why any caterer should be chosen and I believe the food we cook is some of the tastiest you will have eaten. Whether it be low and slow American style smoked BBQ or Roast meats over charcoal we are happy to work with you to find a menu that fits your event. Street food is fast becoming the thing to have at your wedding or event and with Old Smokey its really cool too. Guests arriving at your event will see a 4m antique steam train gently smoking away and be greeted by the smell of roasting meat. Old Smokey is a Fantastic attraction built by true artisans.

Catering FAQs

Expand all

Your expert caterer will be able to advise you on the most suitable menus and service.

It is important to know the following before deciding on a catering company:

  • Event Specialists - Many caterers handle certain types of events on a regular basis, such as weddings and corporate events.

  • Different cuisines - Caterers might specialise in different kinds of cuisine. Some caterers may provide a fine dining experience while others excel at barbecues that suit company picnics.

  • Special requirements - If you have special requirements for the food or a specific menu in mind make sure your caterer is happy to meet those requirements.

  • Venue - Your gathering might be taking place at someone’s home, a venue or outdoors. It can be helpful if your caterer has worked at the venue before.

  • Tastings - Ask for a tasting to make sure the food is of a high standard. Most caterers will prepare one for you at no charge, allowing you to assess the quality of their cooking before you hire them.

You could look for caterers with a foundation degree, higher national diploma or degree in Professional Cookery and Culinary Arts.

Before you choose a caterer, you could read testimonials and see pictures of their food on their website.

You could also look at their profile page on Bark and read reviews from past customers, too.
