What’s your signature dish?

Great Question although probably for me more of a style of service then individual dish.
Originally from Australia and completing my Apprenticeship in commercial cookery (Chef) at some amazing restaurants, and resorts throughout Queensland and Australia.

I have have been a part of the fine dining scene, cruise ships, small boutique bistros, 5 star island resorts, large high street franchise operations, wedding venues and after all that I have a style that I love is live cooking over the flames.....
BBQ's, Grills, Slow n Low, Fresh seafood are my favourites when a special event comes together. I enjoy the theatre of live cooking, the flames, cooking smells, the smoke.
Grazing stations, buffets that showcase local , seasonal and delicious ingredients.

How do you go about creating the perfect menu for your clients?

I always try to get a good understanding of how the event hosts would like to their event to feel and what their expectations are.
I have amazing menus and service styles that suit relaxed and sociable special events. One of our biggest strengths as a team is adaptability, we can alter and adjust our menus, banquet layouts, buffet configurations and timings to suit all event styles.

What do you love most about your job?

When customers approach Scout & Hunter they generally have an idea of how they want their day or event to go. We show them options, offer some variety to the menus and show them another way it could be done. We help to customise their special event to suit their style. I would say being part of some great special events is the best thing about my job.

What inspired you to start your own business?

I started "Scout and Hunter" because I found the areas around Dorset, Hampshire had some stunning local produce and beautiful locations.

What was on offer at the time was very much a case of the old menu style, the best way to describe it was by saying "are you having the chicken or fish". Or it was a case of another beige buffet and I just thought that it could be so much better.

What changes have you made to keep your customers safe from Covid-19?

Our outdoor style of event has worked very well during covid times.

We have also adapted our safe working methods and standard operating procedures to incorporate additional key factors such as spacing , personal protective equipment, increased sanitising practices, safe service methods.
