Service is good as waitress was very welcoming however I decided not to eat here and left as I noticed how dirty the whole place was. Its clear its a build up of years and not just a few days giving cleaning a miss. The fridge by the tills was extra off putting so dirty and has mold at the bottom. Concerning that food is being kept in there. Can’t imagine what the kitchen is like if this is the state of the front of house. Went there with my wife and we will come back for sure. We had about an hour to spare so we quickly went there and the car park makes it very easy, but let’s talk about the real stuff. THE FOOD. First, I love pistachio so I had to try the pistachio pan cake ! And it was fluffy and tasty. The strawberries 🍓 did great and the pistachio sauce was the perfect blend 9/10 because you can always improve 😆. Second, my wife went for the merguez sandwich. Now, we grew up in France and merguez sausages are a BBQ staple. A must ! And I haven’t had a good genuine merguez in 20 years in Scotland 🏴. Therefore I was really 🤔 wondering how it would go down. Now. Enough talk, the sandwich took me by surprise, the merguez was seasoned perfectly. It wasn’t a sausage but a pattie and it worked really well, the melted cheese the pickled veggies and the bun bread… it was perfect. 🤩 9/10 (same reason - I’m a tough cookie to crack) Conclusion : I would recommend this place simply because every bite is worth it, the atmosphere is relax, the waitress was very nice and we will be back for certain, for all the above reasons. I recently visited Toni Modi in Edinburgh and tried their fluffy pancakes topped with pistachios, strawberries, and white chocolate, and…. wow, they were incredible! The pancakes were perfectly soft and light, while the toppings added the right balance of freshness and sweetness. As always I also ordered my fav drink “coconut mocha” which was smooth, rich, and had just the right hint of coconut. Both together felt like a real treat- bounty bar if you like that one, you have to try this combo! The café has a cosy, welcoming atmosphere and the staff were really friendly. I met up with some friends in Kuba over the weekend, and we all had an amazing time. The place is very spacious and the kids had fun too. . there were even some toys for them! The food was superb and the staff was lovely.. I had the plant based breakfast, which was probably one of the best I've ever had (everything is made from scratch). We just came back from a trip to Edinburgh, and this was our favorite spot for breakfast. We went here on our first day, and then to a few other places, and on the last day, we had a unanimous vote to return to Tani Modi because it was our favorite of the places we went. I had the shakshuka both times, it was delicious. My husband and son both had pancakes (first time - pistachio and banana, second time - tropical and pistachio). My friends and I arrived a little late because of some traffic and problems with the bus, but it was no trouble since we’d made a reservation. I suggest to book a table since the restaurant is quite little and gets full easily during rush hour. The restaurant is downstairs in respect of the road level, so it is kind of hot (mind I went during summer). The food is the Scottish traditional. I ordered “THE SCOTSMAN” which is in photo number 1. It arrived after waiting for a bit too much, but was great enough to make up for it. The staff, simply amazing: The waiters are kind and professional. What’s your signature dish?
Definitely a fish dish. Most fishes are delicate and need to be cook with care, unlike meats. Getting a fish cooked to perfection every time gives me smiles especially when cooking for large groups.
How do you go about creating the perfect menu for your clients?
A perfect menu has to be bespoke which takes into consideration allergens and dieteries. A perfect menu should have synergy from the bread right down to the petit fours. At Kuba, it is our belief that each menu should tell a story or at least take you on a journey.
What do you love most about your job?
The smile at the end of a meal, the satisfaction on the client's faces, the clean plates returned to the kitchen. These are priceless.
What inspired you to start your own business?
Freedom of expression. For most of my time working in restaurants and hotels, I was constrained as to what I can cook and serve, which tends to be decided by HQ. Cooking gives me freedom of expression and joy while doing it.
