What’s your signature dish?
With our founders having travelled and trained throughout Europe together we take much inspiration from classical French and Mediterranean influences.
The one that brought us together however is our take on a classic French duck dish with a poached and seared duck breast atop a buttery Jerusalem artichoke purée, with baby carrots and baby turnips, and a blackberry-cabernet sauce. Our twist is to turn the duck skin into crunchy duck crackling crumbs, and garnish with dehydrated blackberry powder!
This one has always appeared in our highest level dinner party menu, and won’t be leaving it any time soon!
How do you go about creating the perfect menu for your clients?
We find that the joint effort of developing a custom menu is one of the most enjoyable aspects of the booking process- we use initial comments write bespoke one-off menus and then begin to refine this making adjustments until you discover your perfect menu.
This is probably the greatest benefit over restaurant dining, and can a host with a sense of pride and ownership over the menu, allowing them to take at least a little credit from their amazed guests!
What do you love most about your job?
We at TheCatermen love the creativity and variety as much as you do- no two events are the same and we get to excercise all of our culinary skills at every occasion.
Having experience in professional menu development we love to see a concept develop and grow, until the final result really “makes sense” from the first bite to the last.
What inspired you to start your own business?
It is impossible to find such creative freedom anywhere else on the planet! Even running a brick-and-mortar restaurant has its limitations as you must stick with the cuisine or style that your brand becomes known for- we on the other hand get to fraternise with a great many exotic and exciting culinary creations, and we aren’t planning on settling down just yet!
