What’s your signature dish?
Starter - Salmon tartare, pickled tangerine and ginger, miso aioli with a tapioca pearl cracker.
Main - Fillet of beef cooked sous-vide, bone marrow crumb, potato terrine, thyme and shallot jus, red wine jus and seasonal greens.
Dessert - Salted caramel tart, praline macaron and hazelnut brittle.
How do you go about creating the perfect menu for your clients?
Working closely with you to design your own menu, we hand-select the finest ingredients using local, sustainable, organic, British produce and suppliers wherever possible.
We prepare the food in our commercial kitchen uniquely for your event and then finish the cooking on-site in your kitchen (or we build one onsite) to ensure optimum freshness and perfect presentation.

From 2009 to present.
Jonty Franks founded Pure Indulgence Catering in 2009 after training at Leith's and then working alongside the UK's top chefs at London restaurants. His own distinctive style has been inspired by his world travels, travelling the globe for culinary inspiration. Through his epicurean escapades - throughout Scandinavia, the Americas, Central and Southeast Asia and the Far East - Jonty has learned how to create elegant dishes that reveal new flavours with every mouthful. Whilst his distant travels provide him with fresh ideas, they all exist within the context of his upbringing in Surrey and his longstanding affinities for familiar nearby favourites - Scottish seafood, French produce and Italian herbs. He also finds inspiration from the palates of his clients and eagerly composes menus based on their preferences. Always mindful of sustainability, Jonty endeavours to use locally sourced and seasonal produce whenever possible and over the years has built strong relationships with trusted suppliers, thus ensuring the quality and provenance of his food. Jonty’s pleasure and passion relies upon sharing what he has learned with others and he relishes every opportunity to do so, whatever the occasion or event. Accompanied by his team of passionate, highly trained Chefs and waiting staff, Jonty always delivers exceptional service and an unforgettable catering experience.
POP UP RESTAURANT - FISH FOR THE FUTURE - HIGHLIGHT SUSAINABLE FISHING
Together with Moxon’s Fishmonger in London we created a five course menu, which included Artic char from Dorset, a sweet freshwater fish cooked in a native American style on seasoned wood, Colchester rock oysters shucked and served three ways, a deeply flavourful crustacean bisque, and a kelp infused palate cleanser.
ACTION AGAINST HUNGER - CHARITY POP UP - "WASTE NOT, WANT NOT"
Waste Not, Want Not' was an evening celebrating fresh, underused produce. Supporting the charity Action Against Hunger www.actionagainsthunger.org.uk. Myself and Jane Montgomery created a feast of culinary delights. We worked together to put a modern twist on hidden British produce which are rarely used today. Guests were treated to a five course feast, taking them on a journey of exquisite dishes, gaining valuable knowledge on how to utilise these ingredients in their own kitchens.
POP UP RESTAURANT - PUTNEY BRIDGE - ROMEO & JULIET
A candlelit intimate pop up set up under the arches of Putney Bridge. 9 courses were inspired by Shakespeare’s Romeo and Juliet
