I hired Chef Micheal and his team for our wedding weekend and exceptional is such an understatement to describe just how phenomenal it truly was. They handled all cooking & dining services for our rehearsal dinner and wedding reception for 160 guests and completely exceeded catering standards for me based on their excellent communication, above and beyond attention to detail to hit every mark I had asked for and the genuine kindness from Micheal and his staff was just the cherry on top of a fabulous experience to work with. Food was absolutely INCREDIBLE. I had my guests talking about it for literally months after the wedding and still to this day the food is one of the most memorable things they remember not just because of how amazing it all tasted, but the presentation was straight out of a Pinterest board! I feel so incredibly blessed to have had him and his team make both of our nights truly exceed our expectations and I will 100% be using them for any event I have in the future going forward! I have a European influence in the majority of my cuisine but I’m versatile in many other cuisines as well. I have had the honor to experience a lot of opportunities that have allowed to help master my craft and to prepare the best menu i can. I also like to-keep things fun and lighthearted while working. From the land id say Duck is my go to for cooking and eating. Id probably prepare a pan seared duck breast served with brandied cherries.
From the sea I really feel that you cant go wrong diver scallops and a simple citrus butter sauce.
From the food side of this question i take a lot of things into account. Price point and guest count will also play the biggest factor. However, each step in the process is carefully planned out from gathering the highest quality ingredients to precise fabrication and all the way to your plate. I also like to balance textural differences of the meal itself along with properly seasoning each procedure in the dish. Because we eat with our eyes, presentation also plays an integral role in the thought process. Got to make it look good.
For me personally what I love most about my job is tasting the dish when all the components finally come together and how you envisioned the plate to look and taste meets and exceeds the expectations of the guests. Yes i love to flavor but the memory is created in the experience.
