I’ve found that on sites like this the vendors often don’t respond. Kip, however, responded promptly. We discussed the event, a Christmas cocktail party in our home, and he made several suggestions. I thought they were all great. Kip was a proactive communicator and explained his billing so there would be no surprises. He arrived in plenty of time to place heated items into my oven and offered serving tips. The food he provided was delicious and plentiful. My guests especially enjoyed the dates stuffed with goat cheese and wrapped with crisp bacon and the delicately sweet taste of maple. The sausage pinwheels were also a hit. All five appetizers he made were well received. I’ve already told Kip that we will ask him to be the chef at our next party. I recommend him to those seeking a chef for your next party or event. This is Capitol Hill's official "dead spot." This location has hosted a Chipotle, then a pizza place, then a fish fry and now it's "Sub Culture" a sandwich place which is attempting to succeed where others haven't.Will it?I do like what I've seen so far, which is a wide variety of sandwiches at a reasonable cost. They have the typical turkey, Italian, ham, etc. But they also have a surprisingly large vegetarian section and lots of robust hot sandwiches, perfect when you're feeling a bit peckish.I had the roasted vegetable parmesan. Zucchini, onions and eggplant were marinated in some oil and balsamic, coated with a sweet marinera and liberally sprinkled with parmesan. The balsamic mixed with the marinera gave the sandwich a nice sweet/sour thing that I found pretty enjoyable. It was a decent-sized sandwich too and was about $7 (A bit on the high end maybe, but it was good).Service was pretty good, though the sandwich took a bit long to make considering I was the only customer. The decor and layout is very similar to the previous restaurants in the space; You can tell it was once a Chipotle.And for now I hope it remains Sub-Culture. It's a good sandwich shop from what I've seen and tasted. Let's just hope that something finally lasts in this spot.

Spicy Poké is a spicier version with masago thrown in for good measure. And for those that are strictly into the land, the Aloha Chicken uses grilled boneless marinated chicken in Aloha sauce with grilled pineapples.
Make your own bowl if you’d rather. Choose your base like sushi rice, brown rice, or chips, then pick a protein. You can choose Ahi tuna, tofu, or Aloha chicken. Mix-ins come next. Choose from all kinds of fun things like masago, seaweed salad, avocado, tempura flakes, red cabbage, red onion, carrots, cucumber, jalapeno, and scallions, to name a few. Then top it off with a flavor from spicy sesame to Aloha sauce and several others in between.
Spicy Poke Ahi cubed & marinated in spicy sesame oil, tossed in spicy mayo and masago, with scallion crown and sesame seeds on rice. Also our Hawaiian BBQ Chicken!
