For our 18th wedding anniversary dinner, we once again entrusted Chef Victor of The Catered Palate to create an unforgettable culinary experience, and he did not disappoint. This marks our fourth-anniversary celebration with him, and I must say, each occasion surpasses the last. I recently had the pleasure of working with The Catered Palate for a special event, and I cannot recommend them highly enough. First I will start with the positives. Victors food was delicious and creative. He was very organized and his presentation was incredible.
When we had our initial consult with Victor I explained in detail that this was a birthday dinner for my daughter who has severe food allergies to nuts and sesame. We chose a menu and Victor assured me via email that he would make the dishes without nuts and sesame. ( I still have these emails in my phone ) When he showed us the menu for approval there was no mention of any allergens present. As he presented the appetizers to us he described them and low and behold one of the appetizers had a sesame sauce and it was sitting there with all of the food, not to mention that he had handled it around all of the food. My daughter was visibly and understandably upset. She chose to eat one thing that was on the other side of the table. When Chef Victor put the dinner options on the table I verbally verified with him that it was safe for my daughter to which he said yes. Then he went in to describe the dishes to us. There was a meat dish with a pesto topping. I said to him “ so there’s no nuts in the pesto? “ and his initial response was no nuts. Then he changed that to yes there is nuts in the pesto but I can give her a piece without. Because we had spent a lot of money on the dinner we did eat it, many choosing to forgo the meat altogether because of the pesto. My daughter was teary eyed and did not eat anything. This was a birthday dinner for her and she wasn’t able to eat it. Victor asked me what could happen if she eats nuts and sesame and I said flat out, she could die. It’s not a food intolerance or an aversion to a food or someone who chooses not to eat gluten. It is a severe life threatening food allergy which you would think a chef with as much experience as Victor would understand. Later in the evening my daughter did develop stomach pain and intestinal issues most likely from the cross contamination . Chef Victor never even apologized for this. We proceed to throw away everything that was left over and there was a lot because we didn’t eat many of the things.
Overall it was a very, very disappointing evening. Yes, the food was very good, but not what we asked for. We hired a chef so that we could control the food for my daughter and give her a safe birthday dinner. Very disappointed. We hire a chef every year and they have always gone above and beyond to accommodate her allergies. More...

VERY disappointed receiving this review. We had also talked about not all items had to be nut free. You approved the menu! I was very aware and had only 2 out of 9 items that had nuts. You stated that she could be around and that we didn't have to omit from everything as long as you were aware. I get allergies all the time along with dairy free to different degrees. We chatted throughout the evening and you even tipped me nicely. I apologize that I made you feel this way and hope the rest of your week was memorable.

Working with the Catered Palate was great. Chef Victor listened to our long list of food sensitivities and created an incredible menu including an omelet bar for our party of nearly 30! I recently had the pleasure of hiring Chef Victor for my husband’s birthday party. And I’m delighted to share my exceptional experience. He exceeded my expectations. He was prompt and communicated frequently throughout the planning process. He listened to my preferences and customized an extraordinary menu. The Charcuterie Display was amazing as was the delicious Mediterranean pasta salad. The grilled Shrimp skewers with honey mustard glaze and the mini grilled chicken BLT were my favorites. Chef Victor was very accommodating and had great suggestions for the menu as well as how to set up the event in my space. He responded with only 4 days notice and provided a wonderful buffet . He and his team did an excellent job from set up to clean up. We attended a small dinner hosted by the Catered Palate and it was phenomenal. It's hard to say what our favorite dishes were, but among them were the seared ahi tuna with wasabi cream, the butternut squash soup with seasonal chive flowers, the filet mignon, the crab and lobster stuffed salmon over lemon orzo, or the homemade breads. We were all stuffed by the end; the amount of food provided was way more than you get elsewhere. Chef Victor uses the freshest local ingredients and he explained each dish as it came out. We had the amazing opportunity to experience Chef Victor’s pop up dinner this past Monday night. From start to finish, the meal was an event to behold. So many amazing dishes that I was having trouble making room for it all. My favorites were the butternut squash soup with delicious chive flowers as well as the salmon stuffed with lobster and crab with lemon spinach orzo. Every part of the meal was a triumph but these two courses just made me swoon. The presentation of courses and the clearing of dishes by the serving staff worked as a well oiled machine. Working with Chef Victor was a fantastic experience! He was extremely knowledgeable and enthusiastic during every step of the planning process. He happily and easily accommodated two different dietary requirements/allergies. Chef Victor made planning easy and he was extremely accessible whenever we had questions or concerns. He created a menu that catered to a wide range of tastes and made sure everything worked together. He was proactive and managed everything related to food beautifully. Our guests raved about his food.

Having Chef Victor handle the cooking meant that we could actually spend time with our guests and enjoy our party. His table setups were beautiful and he and his assistant Azure stayed on top of keeping everything looking (and tasting) its best. We were fortunate to get Chef Victor on short notice, and the evening was great! My family (7 adults + 3 children) rented a house in Long Beach Island, NJ and Chef Victor came in and prepared an amazing meal (with PLENTY of leftovers for the next few days). It is fun to workshop menu options with Chef Victor as well - he is more than willing to adjust to make sure he is cooking what you have in mind.

Both the food and the presentation was above expectations! Importantly, Chef Victor brings all of his own materials and leaves the place spotless!

We certainly made the right choice when we hired Chef Victor for our son’s wedding. Start to finish the entire process was a joy! Chef Victor was in constant contact with us - meeting with us to discuss everything from the tiniest detail to elaborate table scapes. Chef Victor even visited the venue more than two hours away which helped tremendously with all the planning. Our guests were treated to some of the finest food! We have had so many of our guests rave about both the cocktail hour appetizers and the dinner buffet dishes! Chef Victor is also an artist when it comes to his displays. I have never seen a buffet table so gorgeous! The presentation was a feast for the eye! When we asked that the cocktail hour come before the outdoor ceremony due to weather, Chef Victor hustled and got it done!!! Chef Victor made sure that our guests were well cared for!

Chef Victor, the owner of the Catered Palate LLC, took the time to get know us very well by discussing our tastes, preferences and intentions in designing the right layout for our 40th Birthday/Kentucky Derby Party. Chef and his highly skilled team worked perfectly in preparing and presenting the Southern fare appetizers and dinner to our guests. As the evening progressed many of our guests were taking Chef Victor’s cards, since the food was deliciously prepared and they were envisioning their own dinner party in the near future. The evening flowed beautifully with the food paced well by the Chef and the guests being able to enjoy each other’s company and simultaneously indulging in all the attractive dinner options. My girls trip to Brigantine, NJ last week had a spectacular brunch catered by The Catered Palate. From the moment Chef Victor reached out to me to discuss the event, we clicked and I knew I made the right choice. I’m extra and he is as well. We like to bring 150% to every event.

Chef Victor communicated frequently to ensure he was in step with our theme of a self-care retreat. The decorations and food presentation were just beautiful. His food was so fresh, expertly prepared and absolutely delicious. Our menu consisted of fresh fruit skewers with a yogurt lime dipping sauce, mini crab puffs, eggs prepared to order (we had omelets, eggs over easy and scrambled), pork and turkey bacon, parmesan crusted potatoes, asparagus and brioche French toast with home made maple vanilla bean syrup. I tasted everything and opted for a lobster omelet topped with asparagus with homemade hollandaise sauce. Chef Victor did not play and blew us all away with his culinary talents.

Victor is an amazing, 5-star chef with a great eye for detail!
When I reached out about catering for a surprise birthday dinner, Chef Victor was so responsive, attentive, and helpful. He asked for my input before providing a draft menu and all-inclusive price breakdown. And, he continued to check-in prior to the event to make sure everything was to my liking. The day of, Victor and his assistant, Azure arrived early to set-up. Immediately, the venue started smelling good! He brought tableware that matched the color scheme of our event, and the plating was absolutely beautiful! Check out his Instagram and see for yourself!
