We are completely out the box and one-of-a-kind. We bring the party to you! We don't just drop and go. We set up at your location and prepare your authentic Spanish paella in front of your guests. Your freshly made paella comes complete with a tossed green salad, balsamic vinaigrette dressing, freshly baked rolls, butter and all standard disposable plates, napkins and utensils. Your guests are entertained as they watch their food prepared using only the freshest ingredients such as live mussels and clams, freshly made saffron infused broth, locally grown produce, Imported rice from Murcia, Spain. Pimentón (paprika) all prepared right in front of them. we suggest (Take lots of photos). We are professional in everything we do. From start to finish, we are different and unique from dropping off aluminum trays with preheated food. That's catering the old-fashioned way.

How do you go about creating the perfect menu for your clients?

Paella is a option that pairs well with so many celebrations. Once we know the type of venue we can then offer options on what would work best for the customer. Not everyone likes or can eat seafood so we offer meat paella and vegetarian as well. If you like spice. we can spice it up with La Paella Mexicana or the traditional Jambalaya.

What do you love most about your job?

I really enjoy watching my clients and their guests circle around the paella pan as I prepare the meal they are about to consume. I love answering questions about the meal, its history, and the ingredients used to make it. It makes me stand out from just another caterer.

What inspired you to start your own business?

I have always worked in the food industry. Working in restaurants in Queens, food establishments in Green point Brooklyn and also Midtown Manhattan (NYC) The passion and love I have for cooking. I understand that every event is extremely important to the customer. It's as equally important that I make sure all my clients and their guest are treated professionally, respected and service with a smile. Try to answer any of their many questions regarding the food they are about to consume. letting my customer know that I care.

Experience. I have worked in the food industry since high school. Everything from working in restaurants in Astoria, Queens, Food trucks in Brooklyn, Partner in a fast food Italian restaurant in Jamaica Queens, food club in New York City that served employee's daily meals. I also worked selling hot dogs and Italian sausage's on the corner of 56th and Madison Avenue. I have cooked everyday for over 35 years on top of keeping current with new trends, researching products, marketing and involved in every aspect of the food industry including courses on food protection and management, I recently traveled to Spain, the birthplace of my great, great grandfather. My trip began in A Coruna located in the north west region of Galicia then continued to our hometown of "Lugo" Spain. I toured A Coruna, Santiago de Compastella, Madrid, Barcelona, Valencia, Murcia, Granada, Herencia, Alcazar De San Juan, Toledo and Castilla La Mancha. I met with several Chefs in different regions. Made many new friends.

What’s your signature dish?

Paella is one of my favorite foods. There are so many variations and they all would be considered my signature dish. If I had to choose one it would be the paella mixta. This paella has everything in it. Chicken, Spanish chorizo, mussels, clams, sea scallops, squid, fish and tons of shrimps. Prepared with a homemade saffron infused broth, carrots, green beans, onions, garlic and garnished with roasted piquillo peppers, green peas, rosemary and lemon wedges.
