Our events business has suffered massively due to covid. We own a coffee van and cake bar and attend various events throughout Scotland. The baking side of our business is a very significant part. We have expanded into afternoon tea making and Scottish confectionery. We make a range of different boxes of afternoon teas which change with the seasons, are made for particular seasonal events and beyond afternoon teas we do cake boxes, birthday cakes and antipasti grazing platters.

What’s your signature dish?

It would be on the sweet side our carrot cake and walnut whips. On the savoury side, our vegan sticky marinated jackfruit and asian slaw sandwiches are a big hit. They feature in our vegan afternoon tea.

How do you go about creating the perfect menu for your clients?

We are an events and afternoon tea business in the main. It depends very much on the occasion and which it is that we are doing. If it is an event, consultation and planning occurs and a menu is developed to fit in with a given theme etc and there after individual tastes and peoples dietary restrictions are factored in. We put a great deal of thought and develop our recipes thoroughly.

Our afternoon tea menus are refreshed and special ones are created for Mother's Day and events such as this. We like to create something a wee bit different and create cakes and savoury makes that look and taste lovely. We make sure to use the best quality of ingredients. We are happy to cater for a number of specialised dietary requirements and are always happy to adapt and make changes for our customers.

What do you love most about your job?

I love the baking and creating, coming up with new ideas and techniques. I really enjoy packaging the items. My colleague who is the primary head of the business, is a very creative and artistic lady and is brilliant with all the decorating and is an unbelievable good baker.

She is a great hostess for our events too and is very warm, kind and generous. We both very much enjoy the events and getting fully in the spirit of special themes and themed baking.

What inspired you to start your own business?

It has been a constant in both of our lives, to be creative in the kitchen and to bake. Carol took the initial plunge with the business and I joined at a later date. Speaking for Carol, I know it has been something she has always wanted to do.

We are adhering to all stipulated guidelines. Hygiene standards have always been high and are followed in keeping with the Covid requirements. We follow the rules to protect our customers and do socially distanced drop offs. Masks and gloves used upon delivering boxes.
