What’s your signature dish?
I have a few signature dishes! In the dessert range it has to be my gooey chocolate brownies - crispy on the outside with a soft gooey dark and milk chocolate centre.
In the savory range my 'spring salad' is always a massive hit - A flavoursome salad made with mixed leaves, sugar snap peas, mint, courguette and feta cheese. Another favourite I particularly like make is my homemade scotch eggs; golden crispy breadcrumbs, encasing locally sourced sausage meat with a slightly soft free range egg in the centre.
How do you go about creating the perfect menu for your clients?
It is really important to have a good relationship with my clients and discuss their requirements from the outset. Through understanding my clients likes, dislikes, tastes and budget I am then able to create the perfect menu for them.
What do you love most about your job?
The variety and the endless variations buffet food can offer.
What inspired you to start your own business?
Having worked for 36 years in the catering industry it was my time to 'go it alone'. My last position as head chef at the National Trust's head office saw me designing bespoke buffet menus for the many corporate events they hosted for the directors and staff, and I found I enjoyed nothing more than producing homemade quality food from scratch on a large volume.

Our hot and cold buffets are very popular and clients often complement them with a selection of homemade desserts.

Bespoke Buffet
Our option for a designing a bespoke menu can incorporate sanwiches, wraps, cold meats and salad buffets, to savoury pastries, canapes, mini desserts or cakes, fresh fruit skewers and fruit.
The choice can be as vast as your imagination and budget, and there is always the option to be vegitarian or vegan friendly, dairy free, slimming world friendly or just plain indulgent.
