What’s your signature dish?
My signature dishes are probably risotto with seasonal vegetables and pasta sauces -the ones that simmer on the hob for at least one hour. Home-made stock is one of my favourite staple ingredients for slow-cooking.
In the summer I’m partial to flavoursome, nourishing salads.
Lately I’ve become somewhat obsessed with choux pastry, using it as a basis for desert and savoury dishes and canapés.
How do you go about creating the perfect menu for your clients?
Tell me about your event and dietary preferences, receive tasty and nourishing dish ideas, decide on your fabulous menu.
What do you love most about your job?
Cooking a dish, even the most trivial one is never boring for me as I fully engage with the ingredients and seem to never stop learning.
Cooking totally absorbs me, it feels like the creative side of my brain completely takes over.
I don’t settle for half-satisfying results, which means I’ll practice preparing a dish until I’m happy with it, and confident that it will delight my clients.
What inspired you to start your own business?
Cooking and a love of food runs in my French family.
Living in a small London flat I didn’t really have the opportunity to cook for larger parties - until I moved to a house with a big kitchen! For my 45th birthday I prepared a cold buffet-style lunch for 25 people (well, friends) with 15 different dishes. It was the first time that I cooked for such a large group and the experience gave me confidence that I was able to produce delicious meals on a larger scale.
More recently, I cooked brunch and a two-course plated dinner for a group of 16 ladies enjoying a pre-wedding weekend in Somerset. From planning to sourcing and cooking, I enjoyed every minute of it. Not only was it a success, but once again, it was a hugely satisfying experience.
The idea of offering private cooking services started to grow on me.
Earlier this year I embarked on a professional cooking course with the Leiths Online school to develop new skills and be able to expand my repertoire.
I look forward to demonstrating my new skills in the Leiths kitchen in October, and earning the full Leiths-accredited Essential Cooking Certificate.
