What’s your signature dish?
Noisette of lamb with maple carrot purée, fondant potato, tender stem broccoli and caramelised feta.
How do you go about creating the perfect menu for your clients?
After consultation with the client to ascertain all like/dislikes and intolerances/allergies a menu is custom created from a simple two course supper to a full 7 course tasting menu.
I work to the ethos that your meal should be enjoyed three times: In anticipation; In consumption; In remembrance.
What do you love most about your job?
Taking quality ingredients, and treating them with respect to produce a first class product. Passing this on to the client and in general making people happy,
