What’s your signature dish?
I don't have a signature dish as I like to use the seasons. Autumn is my favourite time of year as ingredients become that little bit richer and the food becomes a little bit more comforting. Seasonal cooking using seasonal ingredients is very important for me. (You won't see me using asparagus in December unless you really, really want it!)
How do you go about creating the perfect menu for your clients?
Primarily, the majority of people work to a budget. So that's where we start. From there I can work out what ingredients to use and build a menu. Sometimes clients really like a certain food so we can always try to work it in to a menu. At the end of the day it's all about the clients and guests.
What do you love most about your job?
Seeing the smile on peoples faces. Also the sense of satisfaction when one gets home after a very long day knowing that things have gone very well.
What inspired you to start your own business?
Having worked for some very good companies and been there from the start I felt it was the right time to go it alone. Slowly but surely taking small steps at a time to ensure the company grows on solid ground.
