We were a table for 8. Our drinks came out sporadically to the point that they didn’t charge us for two because they forgot. Two of our dinners were returned for being over cooked so they gave us free desserts. The portions were small. They only came around with bread once. We love the restaurant but New Years Eve was very chaotic and more than the restaurant could handle. We’ve been there before and had a great experience so this was disappointing. A little late in posting, but I have to give a shoutout to The Establishment for the mind blowing birthday experience that we had on Wednesday night for Caroline’s birthday. Cocktails were on point, food was well balanced and soooo sooo tasty, and the desserts (both liquid and otherwise) were the icing on the cake. We started with cocktails (the Stylist, the Impressionist, the Renegade (not pictured), and the Visualist). Then we opened up a bottle of “baby amarone”, which Andres happily decanted. Starters included a creamy mussel soup for her (Billy Bi), the duck for me (it’s my fav item on the menu, and keto too!), and an Arugula salad to share. Then we moved onto the braised lamb belly, the 16oz bone in ribeye, and a decadent side of broccoli and cheese (it was half gone before I could get a picture). Dessert included two scoops of sorbet, pumpkin streusel ice cream, and the moment that I had been waiting for... a flight of dessert wines and ports. We finally got the chance to take in this great restaurant. From the hostess greeting us at the front or the house to our last bite what a great experience. Had the opportunity to be seated at the chefs table and converse with the chef preparing the first courses. Made is a terrific gnocchi and a celery root soup with mussels. Two tremendous seasonal craft cocktails made it feel like the Fall and Thanksgiving. Private Events Coordinator Shane Diviney does an amazing job of describing all of the food choices we made. The Establishment is a seafood-centric restaurant, focusing on preparing local, sustainable seafood in a fresh and elegant way. Our dishes are seasonal and change very frequently, so we haven't landed on a signature dish, per se. Only a series of incredibly thoughtful, delightful plates that are sure to please.
How do you go about creating the perfect menu for your clients?
Executive chef Matt Canter and his team will create and curate a multi-course menu for you and your guests, relying heavily on discussions with you on what you want to appear on your table.

When you enjoy the privacy of The State Room for your gathering, you will receive impeccable service and the best in Charleston cuisine. We will customize the menu for your event to suit your personal and group tastes.

Wine Tasting / Pairing
Our sommeliers will prepare a tasting for you to go along with your meal selected by region or vintner, or we can prepare a stand-alone tasting to fit your group's tastes or curiosity. Sample wines from your favorite region paired with a 3- to 7-course meal or have a wine reception in our private room. Wine tastings available at off-site locations such as your home or business as well.
Custom Meal Pairing
Work with our sommeliers and chefs to create the perfect meal for your group with wines that go perfectly with each course. Select a specific country or region if you'd like, or let our sommelier customize the pairing for you.
Discovery Tasting
There is always more to discover about wine. This tasting option will allow you to learn more about your favorite region, vintner, grape, or style of wine.
Discovery: Region. Choose your favorite region and our team of sommeliers will select wines that represent the best that area has to offer. You'll understand the terroir and the styles of the area by the end of your tasting.
Discovery: Vintner. Learn about your favorite vintner and taste the different products of a single grower, trying different years of one or more wines.
Discovery: Grape. Learn more about your favorite grape and where in the world it grows and thrives, along with the differences between styles of that grape as used in different regions (compare Cabernets from France and California, for example).
Discovery: Style. Try your favorite style of wine as it is produced around the world. For example, try rosés from France, Chile, and California.
