I make a paella that I've been told is better than any other people have sampled, including those in Spain. I source great ingredients from Iberian suppliers (saffron, smoked paprika, and Bomba rice), use three kinds of chorizo sausage, make my own sofrito, and put loving care into every paella prepared for private parties as a personal chef.

What do you love most about your job?
We all need to eat, and it's more fun to eat together (safely) and enjoy a special meal now and then. What better way than with paella as the center of attraction?!? I love to cook, and I love to share the story of paella with others. Plus, it's pretty tasty to eat, too!
What inspired you to start your own business?
I saw a need and filled it, as the equipment is an investment and it's awfully hard to eat an entire paella alone or with two people. It's very part-time, as I'm not a caterer, but I've held a food handler's certificate and keep up with food safety guidelines. As a Personal Chef, I prepare the meal at your home rather than offsite and brought in already cooked.

Not at all, for obvious reasons! It's very hard to cook and send a meal through the internet.
What changes have you made to keep your customers safe from Covid-19?
I wear a mask and gloves while cooking and serving, changing gloves often. I encourage outdoor seating for enjoying the meal together.
Paella Party for 12-Plus
The price depends on number of people and the choices of chicken and seafood desired, but it’s generally between $20 and $25 per person. I can serve up to 25 people with the pan and burner-ring I have — more if there are other things served as starters!
As a Private Chef, I arrive early, set up, and prepare the meal either while your guests watch or prior to their arrival so that you’re ready to serve soon after the event starts. Setup and preparation take about 2 hours. After serving, I clean up my preparation area, provide you with the leftovers, then leave you to your party.
I am not in the catering business, but enjoy making this dish for friends, family, winery release parties, and now for you and your private party with me as your private chef.
I also have homemade cheesecakes in a variety of types available for dessert at about $25 apiece, with each serving about 10.

I teach classes to small groups (10 to 20) at your place. You’ll learn the history of the dish, techniques I use for my signature recipe, and watch it all come together in the pan, and then we eat! And there will be leftovers…
