Jason Raffin is a very talented chef. He prepared a Christmas Dinner for my family here in Maui last night that could only be described as exquisite. There were three courses, an appetizer, main course, and dessert. The appetizer, a poké with a secret sauce, was a sublimely tantalizing introduction of what was to come, the main course. The main course was a filet mignon and greens on a sweet potato bed that had flavor I've never experienced before. The filet was melt in your mouth delicioso. The dessert was a selection of three expertly crafted delights. Jason and his assistant David prepared the meal quickly in our resort kitchen, and after the meal we had a friendly conversation and after a quick clean up they were off to their next adventure. Jason created an amazing dinner on Christmas for our party of nine. The offerings were original and surprising, as well as delicious and beautifully presented: hors d'oeuvres that celebrated Maui, an ahi poké on a bed of exotic greens, fruits, and avocado purée (garnished by nasturtiums), a filet mignon seared to perfection and accompanied by root vegetables and mashed purple potatoes, and a quartet of tiny deserts that were bursting with delightful flavor combinations designed to satisfy any sweet tooth. Highly recommend working with Chef Jason for your next special meal. His food is perfectly balanced and highlights what's local and fresh. We enjoyed cocktails and small bites then moved onto rolls, ahi crudo, seared local fish, and a triple dessert platter. Everything was truly 10/10, including the special dishes for gluten free/vegetarian. The variety, presentation, and flavors were incredible.
