What’s your signature dish?
I specialize in adapting classic New Orleans dishes to meet the needs of clients and guests with restricted diets. It's not fun to be the person at a party looking at a plate of plain green beans while everyone else is eating something delicious. Instead of a sad plate, why not enjoy Bronzed Eggplant over Vegan Corn Maque Choux with Slightly Smothered Green Beans? My salt-free, sugar-free NOLA Seasoning Blend (available on our Etsy shop) allows me to create great meals for low-sodium and low-sugar clients without cayenne pepper. If you and your guests don't have any restrictions, that's great! I'd love to cook for you, too!
How do you go about creating the perfect menu for your clients?
We talk about it. I let my clients know that everything is adjustable until the day I make groceries for their event (about a week in advance). So if a rogue bridesmaid announces that she's a pescatarian two weeks before the wedding, just let me know!
What do you love most about your job?
Sharing food and food knowledge with people from around the world.
What inspired you to start your own business?
I saw a need in the community for a personal chef who could go to a client's home and make the food they needed to eat taste like the food they wanted to eat. My Dad had high blood pressure, and he was noncompliant. Actually, he was the inspiration for my NOLA Seasoning Blend.

Clients should choose me if they feel completely comfortable with me. Do I understand what you want? Have I given you a thorough proposal for your event? Catering requires a certain amount of trust. I want you to be confident in your decision.
