Wow wow wow! This is the only way I can describe Chef Carla Pellegrino's food, this lady can cook!
I have been a fan of Chef Carla's cooking for many years and have been to many of the restaurants she had over the years.
When I heard she had become a private chef I was quick to jump at the opportunity to have her cooking in my home. I have had the pleasure of hiring chef Carla twice to cook for me and my friends.
The first time it was for my husband's birthday which it's in the fall and he loves meat. So with that in mind Carla picked a great selection of dishes and with her help I put together a menu that had my husband and friends raven about it until this day. Chef Carla put together a beautiful charcuterie plate with amazing selection of cheeses and cold cuts for us and our guests to enjoy with wine before starting the dinner.
The dinner started with the best Caesar salad I ever had in my life! I don't know how she makes her Caesar dressing but it's addicting so delicious it is; and the croutons are freshly made by her; they are the smallest, most delicate and just buttery enough croutons you will ever try, along with Fried Calamari served with her Marinara sauce.
For our middle course I chose the Pappardelle Porcini Mushroom sauce, and of course some Marinara pasta and meatballs :) The Main course was a filet mignon wrapped in Pancetta served with carrot pure and string beans. For dessert she served a delicious apple tart made by her with a scoop of gelato.
The second time I had the pleasure to hire Chef Carla was for a ladies get together so we decided to have a pescatarian menu to go well with all the white wine we knew we would be drinking lol. I chosen to have chef Carla make us a few sushi rolls for the ladies to enjoy before the dinner. For appetizers we had her famous seafood salad and of course the Caesar salad I love! Four our middle course we had spaghetti vongole and Risotto served with seared scallops. For main course we had Halibut served with spinach in a lemon butter sauce and some grilled veggies put in the middle of the table to share. We ended the lovely dinner with white macedonia served with a scoop of gelato (chef explained it is a more summery fruit salad marinated in white wine for hours, it was so good!) As expected it was another success dinner. Plus chef Carla has the best personality, while still being very professional and extremely clean. Our kitchen was spotless clean while she was cooking which made me feel like I was on a set of a cooking show watching her cook lol And she leaves the kitchen impeccably clean when she leaves, which I love because I am a very clean and neat person.
I look forward to another event I will host and I will most definitely hire Chef Carla. I can't wait to see what other memorable culinary journey she will take me and my guests next time.
I obviously love her food! And took the time to document it here because I am sure anyone that tries her food will be amazed by her cooking.

Chef Carla amused me and my guests from beginning to end, she was skillful, gracious, and spotlessly clean and the food was just fantastic! We still rave about that dinner, everything was delicious and beautiful; we are already planning on hiring her again, she is worth every penny, one of the best gourmet experiences we had. More...

I had heard about Chef Carla Pellegrino's incredible food from friends that had the pleasure of dining in the past in one of the many restaurants she owned, so when a close friend told me that you could hire Chef Carla to cook in your home I was absolutely thrilled. As expected her food was absolutely divine! I invited 2 of our closest couple's friends and the night was remarkable, Chef Carla even helped me choose the wines that would best pair with the meal she was going to cook for us. She started off our dinner with the absolute best seafood salad I ever had in my life! And an Arugula and Pear Salad and some Mozzarella in Carrozza (which is like breaded mozzarella served with a delightful fresh tomato sauce) For our main course she served us the lightest and most wonderful bolognese pasta and Veal Milanese. I mean, the dinner was amazing!!! Oh, and how can I forget the ricotta cheesecake with the fresh strawberry sauce on top. Yum! That was a night neither one of us will forget. I hope to very soon put together another dinner and I will most definitely hire Chef Carla Pellegrino again to cook for us. I highly recommend her. Her cooking is delicious and has the perfect balance between homey and refined. More...

My private Chef services include the following steps: Customized Menus creation (based upon prior phone or zoom meeting and your specific requests), creation of food shopping & preparation lists, choosing the highest and freshest ingredients for your meal, a previous cooking sight visit (your kitchen), Food shopping (3-4 hours), and basic food preparation (such as stocks, peeled & cut) at my kitchen sight, transportation of all menu's ingredients, prepared food base, and kitchen tools to your location, setting up my cooking station, cooking & finalization at your kitchen, plating, service, and then sight breaking down/cleaning up.
