Food was provided for an Alpha course every Thursday for 10 weeks and each week I couldn't believe it but the meals just got better. Felt like I had been tasting food all over the world from top restaurants. I felt fancy, yet sat at the same seat in the same building all coming from the same kitchen and the same man. It was truly a blessing. The food was free but I felt like I should have been paying top dollar for such quality food. Was perfect before the videos on the course, sat well in my stomach and made me feel very much satisfied and settled for the rest of the evening; especially after seconds. What’s your signature dish?
I enjoy cooking a variety of cuisines and there is always something new to learn.
I love cooking meat dishes in particular there is always so much you can do with meat. One of my signature dishes would be:
Starter -
Smoked haddock, caper and Parsley fish cakes served with homemade tartare sauce, wedge of lemon on a bed of rocket and mixed leaf salad
Main course-
Italian stuffed chicken with mozzarella and basil wrapped in smoked pancetta served on a bed of roasted Mediterranean vegetables and a light tomato sauce with a fondant potato.
Dessert-
Upside down Apple and sultana sponge with toffee sauce and vanilla ice cream
How do you go about creating the perfect menu for your clients?
I would first ask whether there is a particular cuisine the client has a preference for or vision for their event. Then pull ideas from dishes I have previously made to create the best menu possible.
I would find out as much about the client as possible. Their backgrounds and history to determine any particular trends in their food likes and dislikes.
I would also do some research into the most local, Freshiest ingredients for that menu. Also depending on the time of year I would advise as to what food is more available and at the best price for ingredients.

Meeting new people and making people happy with great food and service.
Knowing I am offering quality food and service at a honest price.
Being able to grow in my own skills and experience through each event.
The flexibility of running my own business.
What inspired you to start your own business?
A passion for food and a desire to share that with other people. A desire to prepare delicious meals at events and make someones special day even more memorable.
The need to be more flexible with my working life. Starting my own catering business is what I have wanted to do since I started in the industry 13 years ago. Having Catered independently for a few events initially I feel now is the time to take the plunge.
