What’s your signature dish?
Tiramisu. The computer is telling me I must have a minimum of 50 characters. I do not know of any dish that has 5o characters in the name.
How do you go about creating the perfect menu for your clients?
If the client can give me a budget and an idea of the setting (corporate, party etc) then I will design a menu for them. After they have received it they can let me know the items that do not work for them and I will add alternatives until we have the perfect menu,
What do you love most about your job?
The hospitality business is all about helping people and making them happy. This is the part I love most.
What inspired you to start your own business?
From learning my craft at college in San Francisco to having my own catering business in Dublin to having a catering business in Newcastle upon Tyne I have always been interested in food.
