What’s your signature dish?
I specialise in game and Fish so i would not say i have a dish but do have a range
How do you go about creating the perfect menu for your clients?
The menu will be ever-changing, keeping to Toby’s strengths in seafood and game, and reflecting the flavours, produce and culture of the local area. He has also for the past year been studying fermentation, and its vast range of health benefits, which will run as a strong theme through the menu.
It can be adapted on request adapted on request for private functions and events depending on the clients taste.
What do you love most about your job?
Food where it comes from and what you can do with it.
What inspired you to start your own business?
The freedome that it gives and also the flexabilty.
