We used The Paring Knife at our annual Rockhound Roundup Gem, Mineral, & Jewelry Show in 2018 & 2019 and were very pleased with the overall experience. They exceeded the performance of previous food vendors in our show, providing not only delicious food but a warm positive vibe with the customers and even the show itself. My husband and I used the paring knife food truck to cater our company Holiday party. We set things up for catering rather than our guests going out to the food truck. Jesse and Stacey were wonderful from start to finish. Â We wanted easy to eat while standing finger food. We decided on beef and chicken skewers, endive with quinoa, grilled cheese with apple and caramelized onions sandwiches,blue cheese tartlets,and twice baked mini potatoes with smoked salmon mouse or bacon and cheddar cheese. Â Our guests loved the food, and it was easy to eat while "mingeling". Â Jesse and his team arrived on time and were very easy to work with. Â They kept refilling the food as the party progressed. The only tense moment happened because we didn't realize that we needed to let the city know there would be a food truck that evening in back of our office. We had an issue when an officer arrived requesting permits. Â The officer let Jesse and his team continue cooking for us, but warned us that next time we need a permit. Good to know. The only reason we didn't give them 5 stars was, #1 we felt they should have been aware of what permits were required, and #2 the sauces on the skewers of meat didn't adhere leaving the meat somewhat boring, and the goat cheese-caramelized onion tartlets had very little filling with a sweet crust. My family and I ate at this truck at the Paso Pops festival on July 2nd.I got pulled pork chili cheese fries and it was incredible. Full of flavor, spicy, and so satisfying. My Dad and sister enjoyed their meals too.I'll definitely eat here again when I find the truck. Can't go wrong!! More...

I have a winery in the wine ghetto and we have had Jesse and his crew here several times and each time I have enjoyed the food and I have seen many people enjoying the food while they are hanging out tasting. The sliders and tacos were wonderful. My wife got a salad and she  was super happy. Well, the wedding has passed and The Pairing Knife only exceeded our expectations. Jesse ended up catering our rehearsal dinner, wedding reception, and delighted our guests with a surprise late night tamale bar. Working with Jesse and his wife Stacey was fantastic and easy. The amount of compliments we received on our food throughout the weekend was insane. Everyone in attendance found something they enjoyed and some even went back to try additional dishes. Our guests enjoyed bratwursts and Italian sausages at our brewery rehearsal diner. The wedding included pulled pork tostadas and kale stuffed portobellos for appetizers, fries, mixed green salad with stone fruit, red onion and goat cheese, sliders, chile verde tacos, vegetarian tacos, and the meatloaf sub. And that's just off their regular truck menu. I can only imagine what Jesse's full catering menu entails! Absolutely TOP NOTCH food and service! The Pairing Knife catered our pool side wedding reception on 7/25/15 and every aspect of the evening was perfect. The food was one of the stars for sure. Every appetizer was delicious, displayed in a beautiful way and was well thought out and planned. Jessie made recommendations to help us decide what apps to choose and each one was more fabulous than the last. He is such a wonderful guy. Â Our guests were raving at every bite! My roommates and I went to central coast brewing and splurged on most of the items on this menu. The next day we were surprised when we saw the pairing knife at tap it! We didn't order from Jesse but he remembered us and treated us to the delicious fries with a mustard aoli! The food is so good! And you can't beat the friendly service! We heard about this 5-star chef-turned-food-truck-entrepreneur from several local write ups (SLO Life, etc) and we tried most of their satisfying offerings while they were parked at Kelsey winery.
