We finally got the chance to take in this great restaurant. From the hostess greeting us at the front or the house to our last bite what a great experience. Had the opportunity to be seated at the chefs table and converse with the chef preparing the first courses. Made is a terrific gnocchi and a celery root soup with mussels. The Sunday Brunch was Fabulous. We had the Whipped Ricotta Appetizer and the Steak and Eggs Entree. Best steak and eggs ever. We enjoyed the live music. Excellent restaurant. Food was outstanding. Happened to be restaurant week when we went so the price was right. $40 for 3 courses. The server explained all the dishes & sources, collectively we tried several things. The renegade cocktail was really good, whiskey based, smooth. The asiago bread-amazing. I almost would just come here for a glass of wine and the bread. Oyster salad with green goddess dressing was pretty good, the oysters were good, the salad was fresh, the dressing was ok, kind of watery, not bad but didn't jump out at me. Grouper was amazing, sous vide, so super moist, no sear, served with a corn/creamed corn, absolutely my fave item. Tomato app was delicious, the tomatoes were fresh, served over ricotta, with parm crisps. You could make it at home, but it was delicious either way. Swordfish was very good, had a nice crispy sear, I think swordfish tends to be a little dry so needed the bean salad/hash (it was like a succotash) for moisture. But excellent flavor. The gnocci was good, the sauce was amazing. It was a creamy buttery crab sauce, I spooned it up after my friend was done eating the gnocci. Dessert was ok, nothing exceptional, would have liked something more exciting. Only 2 choices, chocolate mousse cake or flan, both I can make at home. They were good, don't get me wrong, but I would expect a restaurant like this to have a higher level of dessert, something seasonal (the fish/entrees were seasonal, so why not dessert). Wine was good, there was just one problem. The wine guy, who we thought was the sommelier, says (after we ordered the first bottle) that he doesn't really like/drink wine. So that was totally confusing, and the second bottle of wine ended up not being what we were looking for. I saw him when I walking to the bathroom so I let him know (after he asked how the wine was), he said he would swing by the table to check on us, and he never came back. So that seemed kind of hokey, if you are going to have a person suggesting wine, they should really be a wine drinker, and they should never admit that they don't drink it. More...

Previous reviews mentioned the high level of personal service and we certainly can confirm them. Starting off with valet parking and a warm welcome we felt well cared for. Kate our server and Brian our sommelier were attentive without being obtrusive and spoke knowledgeably about the menu and wine (many interesting options!) while being causal allowing for just enough variety to offer a nice range of options but with focus on very creative preparations and presentations that brought out the best of each offering. There was live music that was very complimentary to the ‘atmosphere‘ and we didn’t have to compete with it to chat. The restaurant was well laid out and while we had a window table (Again the service!) I would have been happy with any spot in the room. Thanks to the staff seen and not, for a very nice meal. Great business casual to semi-formal restaurant in Charleston. The restaurant itself was quite large and spacious - you never felt like you were "sitting on top of" the table next to you. Our server Lukas was fantastic. Super knowledgeable about the various dishes and wine pairings, and overall was very passionate about the food. His suggestion of the gnocchi to start was marvelous - some of the fluffiest "pillows" we've ever had, topped with crab meat. Next, our entrees - Lukas recommended me the pork chops while my pescatarian wife ordered the flounder. My wife described the flounder as some of the best fish she has had. The pork chops were delicious, but hard for me to compare as I infrequently order pork chops (Lukas described it as his favorite pork chops ever, just as another opinion). We asked for wine pairing suggestions (by the glass) - here was where Lukas also shined. They had two sommeliers on staff, but Lukas had some great suggestions. My wife ordered a white with hints of fruit that paired well with the flounder and its base. I was recommended a grenache syrah blend of the Rhone variety (but from central CA) that paired perfectly with the pork. Lastly, the dessert did not disappoint - we ordered the chocolate olive oil cake. It was the best part of the meal - a wonderful chocolate mousse layer on top of an almond-flour based chocolate cake, topped with macadamia nuts. My wife could not stop raving about the cake, which didn't stand a chance to the two of us. Some other miscellaneous thoughts: from a cocktail perspective, I had the Sweet Lil Nellie, which was a rye-based cocktail. Absolutely delicious - tasted like Christmas (mildly sweet with notes of orange and spice). As we were halfway through dinner on a Saturday evening, they had a live piano player start playing (softly enough that you could still hold conversations, and we were sitting right next to the piano), which was a wonderful addition to ambiance. The staff was also great and attentive - we could not have more than 2 - 3 sips of our water before someone came around to refill our water (from the glass bottle that they left on our table - so we could have done it ourselves).Overall - would highly recommend this restaurant. This was our third time dining at the establishment. Food as always was excellent but where they seated us this time was next to the kitchen and neither us or our servers could hear. We ended up shouting at each other. In the past our service has been excellent with attention to every detail. This time we barely saw our server. It was a very busy night. We brought friends and wanted them to experience the same great service and food that we had enjoyed before. If you're looking for outstanding food and service, this is the place. Everything is a wonderful and spectacular treat for your tastebuds. Made reservations for a party of 8 to celebrate a birthday. We wanted a place that would be special and celebratory. The staff at The Establishment delivered. Our host Lisa, seated us right away for our 8:15 reservation with a special happy birthday wish as we noted on the reservation that we had a birthday in our party. Champagne flutes at every place setting were a nice touch that added to the atmosphere that this was a special occasion. Shane brought out a bottle of champagne to kickstart the festivities. We started off with a toast. It was restaurant week, so we opted for the three courses. At our table we had the gnocchi with lump crab that was absolutely the best gnocchi I've ever had. I am still wanting more. I cannot get enough of it. Two in our party had the crispy duck which was rich and flavorful. The heirloom tomato appetizer is accompanied with fresh soft cheese and delicate, thin, crisp cheese medallions. They sent our table an order of the raspberries as well. It was fun sharing a little taste of everything around the table. The wine selection is one of the best I've seen. There were great selections for everyone's palette with a sommelier on hand to assist with the selection. I no nothing about wine, but his recommendations were spot on. For our main course we had swordfish , the ribeye, ( I would definitely put this place as a top steak dinner destination) grouper, and ratatouille. It was all delicious and beautifully plated, but my favorite surprisingly was the ratatouille. For dessert we had chocolate olive oil cake topped with a light and airy perfection of chocolate mousse, flan, and made in house ice cream. Went here for the first time during Restaurant Week, and it was fantastic. A bit more expensive than some others at $40 for three courses, but worth it. My husband’s first course gnocchi was amazing, and my fried oyster salad was delicious. I was surprised by five oysters for a starter, and the salad was a generous size. The Establishment is hands down my favorite place in Charleston, and I’ve lived here for a long time. The genuine welcoming atmosphere is so refreshing, and every time I go back (which is often), I’m remembered and greeted personally. The food is incredible- a seemingly simple menu, but one that changes often and when the food comes, it’s more incredible and imaginative than you could expect. The cocktails are very unique and I can easily tell apart their drinks from others. Overall a nice experience! The food was all that everyone said it would be. It was restaurant week and it was busy!! We were early and went to the bar for a drink. We had to wait 15 to get a drink and once we ordered our drinks, the hostess came by to get us for our table. She ended leaving us because we had to wait for our drinks to be made and then when we went to the hostess they said the table was not ready. So we waited while listening to the pianist which he was amazing!! Finally we were seated and Justin was our server. He was so nice and helpful with the menu items. Overall a nice experience! The food was all that everyone said it would be. It was restaurant week and it was busy!! We were early and went to the bar for a drink. We had to wait 15 to get a drink and once we ordered our drinks the hostess came by to get us for our table. She ended leaving us because we had to wait for our drinks to be made and then when we went to the hostess they said the table was not ready. So we waited while listening to the pianist which he was amazing!! Finally we were seated and Justin was our server. He was so nice and helpful with the menu items. Wow! This was a 10 out of 10 dining experience! My boyfriend and I showed up around 6:30 PM on a Wednesday for dinner having picked this as our restaurant of choice for Charleston Restaurant Week. We were greeted politely and asked if we had a reservation. The place was very empty as it was early in the evening, but they said they had no tables and asked if we would be okay sitting at the Chef's Table (a barstool type seating overlooking the kitchen area). Having read some stellar reviews about the Chef's Table, we gladly accepted. Within about a half hour the whole place was packed, so I can see why they mentioned having limited seating available without a reservation. Regardless, I think we got the best seats in the house because our experience was wonderful and very memorable! Our server was top notch, walking us through all the options as well some friendly chit chat. I thought it was lovely that their Restaurant Week menu was their real menu and not some particularly small menu with very few options. I started off with Lump Crab Gnocchi (this was a cheese instead of potato based gnocchi, so light and airy, I never want to go back to the traditional way) and it was to die for and my boyfriend had the Fried Oyster Salad. We watched them prepare several other dishes, two of which, the Shrimp and Duck both looked amazing as well. We then moved on to the main entrees where I had the Swordfish and my boyfriend had the Grouper. Both absolutely amazing. We split a side of the Polenta but started eyeing the Eggplant after seeing it prepped, we inquired with the chef and he offered us a small portion of it complimentary just try! So very thoughtful! After the main course we moved on to dessert, a Chocolate Cake and a Flan, neither of which are my favorite types of dessert, but I'm glad we didn't pass them up because they were incredible! I should also mention we enjoyed a couple of signature cocktails and they were excellent as well. It was our first time dining at The Establishment AND THE OVERALL EXPERIENCE ENTIRELY EXCEEDED OUR EXPECTATIONS!!! The energetic hostess was so pleasant and accommodating; our server, Caitlynn was simply outstanding with everything we requested; the water glasses were filled continually; the Laurent Perrier Champagne was sensational and the Manager checked to make certain that we had a beautiful experience! The Establishment is one of the “places” in Charleston, so my expectations were high. It is in the thick of the historic district of this amazing city, and deserves some props just for “being there” as Charleston becomes known for its world class cuisine. Though Charleston- with its steamy summers and casual lifestyle - is not know for its wine savvy, The Establishment has a credible cellar. Eating solo this evening, I visited their “by glass” offerings, and found very nice accompaniments for my dinner. Their white wines, for me, are much more relevant than their reds, due to the great seafood-centric fare. I ordered - and fully enjoyed - both a Sauvignon Blanc and a Chardonnay. My only complaint was that I felt very strongly that our server was really trying to upsell the menu. Felt like a queen thanks to the impeccable staff and outta-this-world food! You can tell it's a labor of love with the attention to detail, flavor, and soft ambiance. The moment you walk in there's a Charleston vibe thanks to the original brick archway from the 1700s and tbh whoever designed the place I would want for my future home from the soft greys to the stylish light fixtures. The entire staff is personable, cordial, and Anna, our server, was the best by keeping us hydrated and checking in often with a friendly spirit. My friend won an instagram contest so we balled out more than usual by starting with appetizers: lump crab gnocchi and roasted tomato, parmesan sugo ravioli. Truthfully the next time I'm going to the Establishment I'm most likely requesting a bowl of those succulent sweet tomato raviolis. *drool* I can't stop thinking about them!!! If I could give more than 5 stars, I would. The food was excellent, and the service was unbelievable. As soon as they found out it was our anniversary they brought us a complimentary (rather large) toast of champagne, and when we declined dessert they brought us one on the house anyways. Server was incredibly knowledgable and made a great recommendation (pork chops!). There were at least 3-4 different people paying attention to our table - as soon as a dish was empty it was whisked away, and the water glass never went below half full. The Establishment was recommended to us by friends who had recently had a good experience there. The first impression upon entering is impressive--handsome dark wood decor, nicely laid out space, welcoming hostess and an attentive waiter. The menu options run toward seafood, which is fine with us. Our guests ordered the fried oyster caesar salad as a started to split, which they declared to be excellent. My wife had a duck confit small plate. She thought it was tasty, but also considered it to be somewhat overcooked and dry. I had a grilled peach salad with a very interesting ubriaco di raboso cheese, country ham, and watercress, Excellent. One of the guests ordered the grouper with creamed corn. He extolled the preparation and the taste. His wife's dish was the swordfish, which was also excellent. My wife selected the Gnocchi, lump crab, pistou, bread crumbs--which the waiter pointed out were actually gnudi--a similar pasta but without potato. The dish was superb. I ordered the Whole Fish with romesco, roasted cipollini onions, pickled peppers. The fish was a red snapper. The dish was attractive and more than ample. Unfortunately the fish was overcooked and dry--unforgivable when the price was $46. The waiter offered to bring me something else, but with everyone else enjoying their meals I demurred, not wanting to make my guests feel awkward. The good news is that the desserts were terrific: Bruleed peaches with Point Reyes Ice Cream and Ricotta Panna Cotta decorated with peaches, basil, and crumble. The wine we selected with advise from the sommelier was a Kerner by Abazzia di Novacella which was excellent. Dry, but with excellent structure and not overly acidic. Overall we had a nice time marred by a couple of flaws in preparation--most seriously the overly dry snapper. We will return and hope these were aberrations. I don't think I can rave enough about this place. A girlfriend and I went to a food blogging event and won a gift card and even met the head chef (Matt? ) while trying some of their seafood stew. He recommended that when we make the reservation to request the chef counter so we did just that! We finally were able to visit this last March and I completely forgot to express how amazing it was until I met the marketing manager recently who reminded me of how awesome it was!While I hate people who call themselves a foodie, this was one of the best meals, if not the best I have had in Charleston in the five years I've lived here. We ended up ordering three appetizers, three entrees and a couple desserts and split everything so that we could try as much as possible. Sitting at the chef's counter made it that much easier to order as we were able to watch everything freshly prepared and put together into such a beautiful plate of art.Our server (an older gentleman who was fantastic) was also outstanding and helped with recommendations along with the sommelier who was amazing and helped us pick out a bottle of wine to pair with our selections. Everyone on the staff was top notch and so extremely friendly and knowledgeable, which made our experience that much better throughout the evening.We had the roasted carrots, duck confit, beef deckle, snap beans, veggie rissotto, swordfish, seafood stew, banana ice cream, and they even wanted us to try the flan so badly that they provided it complimentary. Everything was superb, from the cocktails to the food to the service to the piano music to the valet parking, we were very impressed. Our server was Zac, he was attentive without hovering and had excellent suggestions/descriptions of menu items. This restaurant is sophisticated and chic, beautifully designed to keep bar, diners, and large tables separated in a large open space. The Establishment simply never disappoints! Since opening last year they've become one of my favorites and I'm always excited to bring "new recruits" into the family:) The menu is thoughtfully and creatively devised of the best seasonal local ingredients, perfectly prepared and beautifully presented. My biggest dilemma on every trip back is whether to enjoy an item still on the menu that I previously loved or savor something new. Whatever my choices, every meal presents a "come back moment" and every leaves me looking forward to the next time. The wine list in both glasses and bottles is well curated to please any wine over. The cocktails are awesome so whether you choose the bar, the dining rooms or prefer to sidle up to the raw bar and watch the show, you won't be disappointed. The food was spectacular. The eggplant, served as my starter, had a pleasant pairing of pickled green cherry tomatoes. I had the scallops as an entree. They were succulent and tender. The watermelon side dish blended well for sweet and salty perfection. When each dish arrived, Brice explained each one thoroughly. We had a great well paced meal here in a nice setting with very good service. A welcome surprise was that all wines were half off so we got to try a nicer bottle from their extensive wine list than we usually would have picked.

We had a beautiful and delicious meal at the Establishment. Not only were the food, cocktails, and wine excellent, but the service was outstanding. We let the staff know that it was our daughter’s 11th birthday and that she is an aspiring chef. They went above and beyond for her: seated us next to the open kitchen so we could interact with the chefs, several members of staff stopped by to wish her a happy birthday, and to top it off, they gave her a signed menu and a thoughtful book! This was our first time here and definitely won’t be our last. Everything was amazing from the drinks all the way to dessert. We are a family of four and we had the shrimp, tuna, heirloom tomatoes and duck from the taste menu and two orders of the whole fish from the Savor menu. This is my new favorite spot in Charleston. I haven't been as thrilled and satisfied after eating at a restaurant like this in Charleston for a while. We started out with the agnolotti and I must say that I never thought lobster would pair so nicely with mushrooms. It was delicious and we paired it with a glass of Falanghina. The Establishment's wine list is small but mighty. We proceeded with the duck, which was cooked perfectly in a blackberry sauce. My mouth is still watering as I write this review, it was seriously scrumptious and we paired it with the Corvina blend. I then had the seafood stew and my husband had the 16 oz sirloin. We enjoyed the Corvina blend so much during our appetizer that we bought a bottle for the main course and it paired perfectly with both the stew and the steak. Finally, I had the chocolate olive oil cake and my husband had the pana cotta, which we paired with a glass of 1988 Sherry wine. It was heaven.This is our new go-to place. I can't wait to go back!! Sat at the "Chef's Table" which is really a bar overlooking the kitchen. Fun to watch them cook and prep the meals. The chefs were quite friendly. Wait staff and management were very attentive.
