What’s your signature dish?
Tortelloni stuffed with butternut squash, caramelised onion and speck served with butter and sage sauce, finished with a crumbled amaretti biscuit and parmesan
How do you go about creating the perfect menu for your clients?
First and foremost is discovering what the clients tastes are. Then deciding on the type of occasion, and discussing the options and also looking at what is seasonal.
What do you love most about your job?
Being creative and making delicious food, that pleases the clients and ourselves.
What inspired you to start your own business?
We both began as chefs in our countries, francesco left Italy and came to England were we meet in Bocca Di Lupo, London. From there we became private chefs and traveled the world learning more about different cuisines and then the natural step was to start our own catering company.
