Giuseppe makes the BEST pizza in San Diego and La Jolla! He's legit - he's from Capri and shipped his oven from Italy. His ingredients are fresh from either Italy or locally sourced. I automatically assume when I see a woodfired oven, that I cant eat anything there. I'm gluten free (non-celiac).  Today I was pleasantly surprised and had the pleasure of trying Cucina Caprese's gluten free pizza.  It's made with buckwheat and it's delicious!  Thin - a bit earthy in flavor - crispy edges - it complimented the flavors of the toppings wonderfully.  I got their Bufalina pizza with Prosciutto.  They take heart in every pizza they make and it shows.  I'm very much looking forward to returning.  Thank you! A mobile woodfired pizza oven truck, with pizzas ready within 5 minutes of my order?!  Yes please!Better yet, they can accommodate food sensitivities? !  Sweet!!!!!Gluten-free crust - Amazing!  I've been GF for more than a decade, and this is *by far* the BEST GF crust I've ever had.  It's firm enough to hold in one hand, and to hold all of the ingredients it's loaded with... but not at all crunchy (hooray) nor chewy.  Wow!  I'm hooked!Dairy-free - I ordered my GF pizza without cheese, and it was still wonderfully delicious!  I ordered the Vegetarian pizza, and I didn't even miss the cheese. Eggplant and mushroom gave great texture. Artichoke was a highlight. Lots of other veggies I wouldn't *pick* to be on pizza, yet all came together for an amazing tasting super yummy pizza.I was even more impressed that the chef asked me if I'm Celiac (no, I'm not).  He said he can't ensure the GF pizza isn't cross-contaminated. That is totally understandable considering the limited workspace of a food truck, and the singular pizza oven.  I appreciated his attentiveness and awareness of people's varied allergy/sensitivity needs. My friend ordered the Carnivore pizza (normal - with gluten & dairy in all their glory), and loved it.  Traditional to genuine Italian pizza, the crust is thin. It is cooked so nicely!  The crust bubbles on the edges.  There are many different choices of pizza topping combinations; it is nice to have options. Cucina Caprese's crusts, the Best crust I've had in my life. The pizza is very light, ingredients are soooo fresh, full of flavor! If you have kids and they don't eat veggies! This mobile pizza oven/food truck always comes by my apartments every now and then and it truly is the BEST, most authentic Napoletano style pizza that I have tasted since I moved back down here!  I used to live in Naples, Italy about 7 years ago and I remember the taste of food, food so fresh that it had to be picked or shopped for and cooked the same day.  This pizza brings back that memory of authenticity and I look forward to every time I get to buy it.  I usually get the calabrese pizza with the spicy sausage or the capriosca because I like the olives and artichokes but the most simple of them all is a margherita pizza, which is just tomato sauce, mozzarella cheese and basil.  This truck even has the D.O.C. mozzarella from Campania region and can put in the pizza for a little extra.  Definitely worth a try!  Find them on Facebook and follow them to see where they will be.  It's absolutely delicious!! I ordered a Carnivora while I was at the Fairy Festival at the San Diego Botanical Garden. It was beyond delicious! This vendor was easily the most popular one in the food court. In fact, I got one of the very last pizzas; he sold out! The pizza was baked in a wood-burning pizza oven, giving the crust a perfectly crisp texture. Delizioso! I cannot believe I am just now finding out about this gem. My coworkers and I all piled in my car and went to their Thursday location. I got the prosciutto e ruccola (and tiramisu) and my coworkers got the bufalina. Molto bene!! Looking for a little slice of Italy right in your backyard? Look no further than Cucina Caprese. Luckily they visited my workplace (e. g. Salk Institute). Otherwise I would not have experienced the culinary vision that is their Reggina Margherita pizza. The prices are fair in my opinion, the owner was very friendly, and they pride themselves on authentic recipes as well as fresh ingredients. Every time we go to La Jolla Open Air Marker we order pizza from the Italian guys there. It is the best pizza I had in San Diego, so when we had a big party at our house we immediately thought about them and asked if they will cater. Lucky for us they did.
