Personal Chef Miguel is skilled in a variety of special and exotic meals.His risotto dish was very colorful and seasoned to perfection. The asparagus (my favorite) severed over oven roasted small white potatoes cooked in olive oil, with Chef’s own white sauce was tasteful and amazing. Chef Miguel explained every cooking step he made while preparing and cooking this delicious and scrumptious meal for our small group of eight. I was invited last Friday, to an exclusive dinner at my Friend’s house where the Personal Chef was Miguel Calderon. I can’t say enough about the wonderful experience that I had. Miguel was charming, friendly, relaxed and very knowledgeable about his expertise at the table. I was very impressed. I enjoyed learning about the art of making rich, creamy Risotto while drinking white wine and enjoying delicious home made flat bread and succulent shrimp hors D’oeuvre. The Risotto was mouth watering and exquisite to the taste.If you want to have a different, extremely enjoyable culinary experience, invite some friends to your home and of course, Miguel Calderon. Wow! Completely amazed by the talent Chef Miguel displays as he creates food stunning to all the senses! He prepared a meal for us over an outdoor wood fire incorporating fresh farm produce. He served it to us in an elegant outdoor setting with the wood smoke still lingering in the air. Each dish he created highlighted a specific vegetable yet the layers of flavor were incredible. A highlight of the meal for me was his Smoked Fillet of Salmon which he nailed to a board and cooked next to the fire. Thank you, Chef Miguel for an evening to remember! More...

The dinner was just amazing. I loved the salmon that was cooked on a wooden plank. The dinner was in an outdoor setting and everything was cooked right there on an outdoor fire. Wow!

I’m a very lucky guy! I’ve eaten two wonderful meals prepared by Miguel Calderon and I’ll never forget them. Miguel is definitely a top-notch chef with a talent for creating dishes that look great and taste even better. On top of that, he’s a nice person who is happy to explain his ingredients and cooking methods to his guests.My most recent Calderon meal was cooked and served outdoors in a rustic pavilion in the lovely hills of Vermont. For our group of thirteen adults, Miguel prepared a multi-course late-summer feast, an amazing combination of vegetables, fish, cheeses, herbs and spices, much of it locally sourced. He prepared the meal over an outdoor, wood-stoked grill which added a deep, smokey quality to the proceedings. First, the early courses. Baba ganoush with freshly baked Indian nan. Grilled calamari sliced thin and tossed with fermented and pickled beets, chard, and green onions. Grilled blue oyster mushrooms finished with a brown butter and preserved-lemon sauce. Charred delecata squash brushed with bacon vinaigrette. Then, we shifted gears and Miguel presented a gorgeous caprese platter with tasty fresh-picked heirloom tomatoes, basil, and a creamy burrata crafted by a Vermont artisan cheesemaker. And, carrots! If you’ve ever struggled to make a tried and true cooked vegetable into something presentable, you should see one of Miguel’s beautifully architected dishes. This one featured carrots in multiple forms including a smooth delectable puree as well as lightly fried feathery strands. While we were tasting, chatting, and enjoying the Vermont evening settling in around us, Miguel put the final touches on our main dish: wild-caught salmon nailed to a board (!!!), grilled over the open fire, and then carried (board and all) to the table. It was awesome to see and awesome to taste. Deliciously moist, with interesting hints of coriander and brown sugar. Then, since most of us were on diets, we decided to skip dessert. NOT TRUE!!! We happily devoured Miguel’s final creation of the day: a delicate maple pie decorated with husk cherries flavored with mint and lime – and, of course, topped with whipped cream. Needless to say, I highly (very, very highly) recommend Miguel if you need the services of a chef who knows how to choose healthy, fresh ingredients and knows how to turn them into truly memorable meals. We worked with Miguel for several months leading up to our event. He and his wife Kirsten were very responsive and super helpful in answering all our questions and planning the perfect menu. Had a fabulous experience with Chef Miguel. He cooked for our group of six at an Airbnb and everything was phenomenal. He worked closely with me prior to the event to get the menu just right and we couldn't have been more pleased. I wish we lived closer so we could have him cook for us again! More...

Chef uses vegetables picked on the farm that morning and transforms them into dishes that rival any I have had at Michelin restaurants. He served duck breast with an Onion sauce that was layered in flavors. I also loved the charred rhubarb preserve with the duck. We recently rented a home in Vermont for a long holiday weekend. We hired Chef Calderón to cook two separate dinners for our group of 14. Everything about the Chef was great - he was fun, kind and he can cook! He provided menu ideas and worked in all of my requests. Each evening consisted of hors d’ouevres (charcuterie, homemade hummus, shrimp and crab cakes), a salad course, a protein, sides and dessert. His best dish was his shrimp fra diavolo over pasta. He also made us a very delicious beef tenderloin and the woman loved his Kale salad. He was a pleasure to have in the home and even had our kids help him prep and cook. Miguel is fantastic! We had a private dinner for our son’s birthday and Miguel made it an unbelievable experience. Not only does he create his own ingredients including unique flavors and seasoning but he brought the meal to life and had us all help with the preparation. He is a student of cooking and has many interesting stories related to working and eating at some of the worlds greatest restaurants. Also he is very personable and we enjoyed our time together. My husband and I attended a group cooking demonstration that included a multiple course meal and interesting drink pairings. We got to sit right there in the kitchen and watch as he prepared duck, an amazing beet, salad and one of the coolest desserts I've ever eaten. He used to live in Jacksonville, Florida and worked at our #1 top rated fine dining restaurant. I've also had him cook in my home. Amazing.
