This is a case of fool me once, shame on you. Fool me twice, shame on me. I was staying nearby and did a Google search finding this place. As soon as I saw it I knew I'd eaten here before. Didn't fully remember my first experience until seated and I read my original review. I already knew I was going to have the fried chicken instead of steak, so I stayed. It was absolutely pitiful - a soggy, no flavor mess. Pretty sure it was straight from the box marked 'buttermilk fried chicken' out of the freezer. Going by it's size, it should have been advertised as a chicken strip. I've had larger chicken strips from Safeway. If it wasn't from a box of frozen fried chicken, that's even worse knowing a chef/cook dared to prepare a plate that. The waitress forgot it came with a salad and brought it after she served the chicken and finding out what dressing I wanted. It too was pretty basic, but the ranch dressing was creamy and flavorful. If you like dry aged beef, this is the spot for you. Prices are very reasonable considering the quality of meat they have. Dry Bone-in Ribeye was cooked perfectly to temp (RARE!), and the baked potato was also done well. Service was good. Drink menu has many options, or order your own custom drink from their full bar. I loved this place. I the food and service was wonderful. Back story i came to El Paso from out Austin for a family emergency. And because of covid we couldn't visit our loved one in the ICU. I was very emotional. I bring this up because our server was so sweet. He asked me how everything was going and I just got teary eyed... ok tears were falling. But he didn't get awkward he was sympathetic. But he made a horrible feeling not so horrible. I can't remember his name. I came in today for my birthday lunch. Aside from the fact that the food exceeded my HAngry girl expectations, the staff were unbelievably welcoming. Denise, my server, was so so sweet and attentive. The 2 stars is for the nice decor in the restaurant . Everything else is horrrrrible . Every last hostess that worked on Father's Day night was horrible . We waited about 45 minutes to be seated, on a Wednesday afternoon. Hostess wasn't the friendliest but she wasn't rude either. We were seated by the bar, our waiter was friendly and extremely tentative and kept checking in on us. From where I'm from, we have chophouses that really do set the standard so coming here and reading the reviews and their own website statement of "setting the standard" and "delightful culinary experience" you need to back that up and going in I had high expectations. Going in, the restaurant has a nice lively vibe and ambience. It was a Saturday night and it was busy, which is a good sign. As you walk in you'll see the dry aged beef and the dining area is one large room with a bar area in the back. They also have some smaller seating areas along side the restaurant. Back to the standard, unfortunately this restaurant did not. We visited on a Saturday night so it was really busy. My friend and I sat at the bar, which you can do and still order from the full menu, both ordered the 20 oz bone in rib-eye. It comes with a loaded baked potato (butter, sour cream, chives and bacon) and served on a cutting board plate with a smear of Worcester paste. I read some other reviews where people got bread but we didn't get any bread served yo us. Maybe it's because we were at the bar? Regardless if it's a full menu bar service we should've received the same. We both asked for medium rare. When he cut into his steak, it was a bit on the rare side but still okay for his taste since he likes it more on the rare side of medium rare. When I cut into mine, it was very rare. I cut through and tried a couple pieces on the edge but to no avail. It was all very chewy and had a lot of fat. Because it was undercooked I had actually chewed up and had to spit out a couple bites and stopped there. The meat between the bone and steak was solid dark red and WAY too salty. I ready some other reviews of people saying that their steak didn't have enough seasoning. So it looks like cooking consistency is something they really need to work on. I also cut out the fat to see how the rest of the steak was cooked. It seemed like they didn't give it enough time to bring the meat to room temperature and slapped it on the grill straight from the refrigerator. And given how quickly the steak came out they certainly didn't let the steak rest. An experience chef would've done all those things and someone should be checking these things before brining the meal out. When a manager approached to see how things were I let him know and showed him my steak. He said he would take it back, but offered no apology. I expected him to fire up a new steak. But when he returned he brought back the original steak, minus the bone, and the worst part is that they cooked the fat I had cut out along with the pieces that I spit out on the plate. And again, no apology. There might be some hygiene issues here given that someone is recooking food that someone else chewed on the same grill that they're using to cook fresh meet am for someone else. Not very smart in my opinion given the COVID is still around. I'm sorry but when you set high standards and this is what you deliver it definitely does not meet expectations. Maybe this is the expectation level you can set when you're one of just a handful of steak/chophouse establishments in the area but if another good chophouse moves into the area, this restaurant (from the chef to the manager) needs to do better. This is a tough review for me to give.The food was amazing! Bread was brought out after we ordered. I was shocked at how huge the loaf was for just two of us, but you better believe that we ate it all! !! The honey butter was so delicious on it- you can literally see clumps of honey that weren't fully blended in. That's a win in my book!We ordered both the Mango salad and 20oz porterhouse to share. The salad was delicious- I especially enjoyed the nice light dressing that was mixed in with it. The Porterhouse was grilled to perfection! The seasoning enhanced, but was simple enough that the flavor of the steak was the star of its own show. We opted to upgrade from the potato to the asparagus and loved it.So why the low review? Between bread and entree being served, I went to use the restroom. I was shocked at how filthy it was! There was also no toilet paper in my stall. But the worst part about this, was that when I notified an employee, NOTHING was done. While we were eating our meal, a manager stopped by our table (great service point here!) so I took the opportunity to let him know about the restrooms and also that I had told an employee at least 15 minutes prior to that and no one had done a thing. He apologized but it was still an additional 10 minutes until anything was done about it. I try to be pretty understanding of when places are short staffed, but this place was overstaffed, if anything. At any given point of the night, you could see employees clumped together chatting at the bar, at the hostess stand, or by the kitchen (3-8 people at a time)I pray that the cleanliness in the bathroom is not a reflection of the cleanliness in the kitchen! For the price and the atmosphere I'm going to go with a four here. There was a 45 minute wait when we went on a Sunday afternoon but they have a good system of texting you when your table is ready. The menu isn't over whelming but there is a good amount of options. I ordered the filet mignon and the salad ( I ordered the large and didn't realize it was seriously a family styled salad). We didn't initially get bread and I did have to ask my hostess for it but the bread pieces were very large! First, the look is outstanding, inviting, and very Texan. For appetizer, we ordered nachos and guacamole, with beans and salsa. I called to see if we could get a reservation for 16 and they were able to get us in...not only that we had 2 more people join us for our party last minute and they were more than accommodating in fitting them in. Our waiter was great knew the menu made suggestions & did a good job for such a large party. The food was a bit hot or miss...my steak was absolutely perfect but my sons was a bit like jerky...however I think that's more to do with how large our table was & trying to time the food just right. Tried out the new location on the Eastside. It was more spacious and new. It has been a while since we ate at West Texas Chop House. The wife and I came in with no expectations of the food. Came in and was told the wait was gonna be 45 minutes. So we decided to wait at the bar and have a drink. Had a glass of whiskey and the wife had her fruity mixed drink. It wasn't long before our table was ready. So that was a huge plus. We sat down for dinner and the wife and I decided to split the 20 Oz porterhouse with some Mexican street corn and sautéed mushrooms. Right off the bat walking in they have their aged steak options right in a window. You know it's going to be good. Had a party of four So we all had a few different options. But regardless if steak you are after you shouldn't be disappointed. Cooked to your liking and served with some raspberry or something sauce, because I didn't ask and it was delicious. Sides besides the baked potato are a La carte. I also however had the chicken tortilla soup and it was a flavor unlike any I've tried. If you like chicken tortilla soup, definitely try it. I can not recommend this restaurant enough. ESPECIALLY Mya, Jade and our awesome server Al. They treated our large family like their own. Mya and Jade helped seat us and took extra good care of my elderly grandparents. Al was the best server. He was quick, had awesome recommendations and stayed very attentive. The food was just as good as the service! We ordered steaks and a ton of appetizers and we couldn't decide what we liked best IT WAS ALL SO DELICIOUS! Listen, let's not play. It's visually a 4-star (it's fancy looking), with 2-3 star food--and 4 star steaks. I've tried a few times to come here but always left due to wait times and because they don't take reservations --like whattt, for a "nice" place like this? (Unless you're a party, smh.) The steak quality is decent and meets their high-end branding, for sure. If you want a good steak, go get one. Everything else, though, was basic and lacked attention. My pineapple crush drink could have done with a few less cubes for a small $8 mildly-alcoholic beverage, it sure was pretty though. I hear the food here is good, and I'll be in town for a business dinner. It took 5 calls to try and set a reservation because their phone system is messed up. When I finally get someone to answer the phone and try to make a reservation they tell me they can't make reservations past 5pm. I asked if they could make an exception, but they won't and can't estimate wait times either. Likely $1k in lost revenue for the restaurant on this visit, and with customer service like that on the front end I am unlikely to risk bringing a group here at another time. More...

I went with their porterhouse and loaded baker. I liked the cutting board plate, but the steak fell flat. The mignon side was nice consistency, but the strip side a little tough. The whole steak was pretty thin, over cooked (I ordered medium and got medium well) with absolutely no seasoning or flavor. I had to commit the cardinal sin and put salt on it.
