We have heard about The Waimea Butcher shop for a  while and are so glad we finally made it. The customer service was exceptional and they answered all questions enthusiastically. We got the lamb and garlic sausage and the curry coconut sausage and they were amazing. When we got them home the sausages exceeded our expectations. We will be back for more soon. A friend mentioned that the pastrami sandwich at the Waimea Butcher Shop was very good.  We got to the shop a little too late and the pastrami sandwiches were sold out.  The owner told my wife that he only makes a limited amount of sandwiches a day and to call ahead and place an order to reserve one of the sandwiches.  So, that's just what we did the next morning.  We reserved 2 pastrami sandwiches and I made the trek from Waikoloa to Waimea to pick them up.  Mills Stovall (the owner) had the sandwiches nicely wrapped and waiting for me.  He asked me to try the pipikaula.  It was very good.  I brought the sandwiches back to our hotel room and we enjoyed the pastrami meat on a crunchy bread with a soft inside and cole slaw.  My wife said that the pastrami sandwich at Katz's Deli in NYC is still the best, but that this pastrami sandwich was good.  I'm not a huge pastrami sandwich fan so I'm basing my 5-Star rating on the fact that the owner takes pride in his product and sells excellent meats and deli items.  I really enjoyed the pipikaula.  I would definitely ask the owner to make me a pipikaula sandwich the next time we're in Waimea.  Don't miss this shop when you're in Waimea, and don't forget to get there early if you want to try the sandwiches or call ahead and reserve one before you get to the shop. Laid-back little shop with lots of local meat options. The owner, Mills, is a pro and his staff are always knowledgeable and polite. Have a special dinner coming up? They can help! Want to try something a little different? They can help! Hungry for a super savory sandwich at lunchtime? They can help! Mills also has a fridge with various products like eggs, krauts, pasta, etc. If you're ever unsure about something or curious, just ask! I've only been there once and had their pastrami sandwich.  It was the best pastrami I have ever had!  They make all their meats, sausages, chops, etc. here in the Big Island and all the meats used are raised here locally. They have different daily sandwich specials everyday. I highly recommend this place for fresh cut off meat and sandwiches! More...

We've been to the big island 5 times, this is a MUST stop!!  Best on the island for sure, make sure to try the smoked pastrami - definitely something special - skip the deli case at the grocery & get REAL fresh meat! Can't say enough good about this place. We had planned to drop in somewhere to get some high quality rib eyes on the way back from Waipio to Kona, found this place on yelp and it didn't disappoint. Got some amazing local grass fed rib eyes. The owner couldn't have been more friendly or helpful. He explained the differences of cooking grass fed vs grain fed, which I had no idea was even a thing. Went on a Saturday afternoon. Owner was super friendly and helpful. Selection was great!I asked about their types of sausage, which the owner listed off enthusiastically: breakfast, Italian, Portuguese, curry, lamb, and chorizo are the types I recall, but I think there may have been more. Would like to try them all! Tried the curry sausage last night which was fantastic. From what I read, they have pork, lamb, beef, and chicken, in any cut you want. Will need to go back and ask for a nice slab of pork belly, which is difficult to find in Hawaii without it being sliced into one inch wide slices. Also will need to check out their steaks!Aside from meat, there are other items such as eggs (chicken and quail), lard (beef and pork), butter, pickled vegetables, etc. This is a chef's dream :D. All locally grown/produced, all butchered in-house, so you get to talk with the butcher and get the cuts you want. I asked for brisket, and the butcher brought a giant 16 lb. cut and asked how much I wanted and which portion. Not something I am accustomed to in Hawaii. Visited big island for the 1st time. After eating resort food for several days, we were ready to find the goods locally and cook our own meals. Mills turned us on to some exceptional locally raised beef-aged cowboy steaks and waygu New Yorks.  Cooked up great. Service was great, product amazing, unpretentious shop. When visiting the Big Island this is a must go!  I was tipped off by my boss who came earlier and wow, this is an amazing butcher shop. Mills the owner is standing behind the counter and he clearly knows his art. He is a serious chef having worked in many places around the world so has a lot of knowledge to share. He patiently went through his selections and helped us pick a couple to try. Beautifully aged seriously top class meats are the king here. We went with beef and the two steaks were some of the best we've had in a long time. The only down side is we live in the Bay Area so can only get here when on vacation.Kudos to Mills and Kamalei Stovall for working with their community and providing extraordinary quality at the same time, and especially for sharing this with all of us. "Know your butcher" - This is so true, and I can't tell you how happy I am that along my daily commute route is this amazing local butcher shop that carries all local, humanely-treated meats of ALL kinds.  I literally go here 2 or 3 times per week and see something new week to week. Pastrami from beef heart (OMG, it's amazing!), bacon, wild game hen, steaks of every cut, quail eggs, all sorts of sausage, and even DOG TREATS (oh yes, Mills is a HUGE dog lover, and he makes dog food and dog treats from all this amazing local meat!).  I admit that I'm not any great cook or anything, and I really appreciate Mills (the owner) taking the time to explain how to make a fantastic steak or roast or whatever you buy from him!  Some days I walk in close to closing time (Mahalo for staying open until 6pm!) and am so tired and ask him "What's good today?" and he makes suggestions, tells me how to prepare and cook it, and they are so spot-on!  I admit that one time, we made a boo boo with an expensive piece of meat, and I brought it in to him the next day and asked him to try it, and I had totally messed it up and didn't cut it the right way, but now I know.  And we all have different taste...If you don't like something, just bring it in and talk to him about it.  Mills is so understanding and wants you to like everything there.  I can't think of many places like this. I ordered eight artesian sandwiches of the day and was THRILLED with the outcome! First off, because I told the owner that I would be enjoying them down at the beach with friends, he offered to package the ingredients separately (BBQ pulled-pork, I believe, and cole slaw) so that the bread wouldn't get soggy. And oh. My. Gosh. The pork and slaw provided us with eight sandwiches (the most delicious buns I have ever had) PLUS enough left-overs for at least three more sandwiches the next day. Very generous and well worth the cost. Secondly, the sandwiches themselves were absolutely divine! I haven't had a better sandwich anywhere else on the Big Island, honestly. And of course, it just plain feels good to be eating locally sourced meat prepared by a local butcher. Ah, I will be spreading the word! Mahalo!! More...

Beautiful, carefully chosen local meats raised without any antibiotics or hormones. We were so impressed with the quality of the meats, their cuts, and their sources. The butcher has ties with over 50 small growers from all over the island. The possibility of buying these agriculturally sustainable cuts is a delicious treat...I wish this level of meat craft were more available everywhere...And the guys behind the counter are great at helping you pick the meat that is right for you, and giving you tips on how to cook and serve it. One word - AWESOME!Locally sourced, organic, sustainable meat and produce!  Everything we bought here was so delicious.  We happened to stop by when his smoked chicken was just done, so we picked one up with fresh tomato and cucumbers.  They were so amazingly good that we decided to go back and try his beef instead of dining in a restaurant the very next day.  It met the expectation he created for us.  He was very personable and friendly.  Great service, great product, and great experience!  The only problem is that we live 3000 miles away and can't stop by everyday!! We ran into this little gem, when we were searching for some famous local Hawaiian beef. The owner is so friendly and knowledgeable, and you can see his passion for food. I love this place! Fresh, local, ethically sourced meats for us carnivores. Also, fresh daily sandwich offerings. I love how I can go in there every other day or so and be surprised with something new, whether it be lamb chops, peking duck, or some new freshly made sausage concoction. Very reasonable prices as well, lots of variety, custom cuts, and real nice people. Their daily sandwich offerings are awesome too, and the fact that they offer fresh, local butter, fresh stock, local eggs, and even fresh limes in their cooler section.I hope more people find out about this place. Butcher shops such as these are part of Waimea's history, and it would be amazing to see this place sustain in the long term to service residents and visitors who want a true taste of Waimea. You will not find better dry aged beef anywhere in the world, period. If you buy and cook dry aged steak from Waimea Butcher Shop and it's not one of the most tender, juicy, and delicious steaks you have ever eaten then you are not cooking it right. Not only are all of the products on the shelves amazingly delicious, they are also all exclusively  and ethically sourced from Big Island farmers and producers.This is exactly the kind of business and business owners/operators that we need more of on Big Island.
