Portions are ridiculously small. Ramen had just a few strands of noodles with a bunch of filler vegetables with an over salty broth. The Kaui roll was a couple of bites. My husband and I stumbled across this gem while checking out all the shops in Makawao - it's such a tasty find!! We got a variety of hand rolls and miso soup. We didn't know what to expect and everything was super tasty! The miso soup has lemongrass and brown rice - it's was a subtle twist and so nice. My husband got 3 different fish hand rolls - he loved them all but definitely raved about the Likikoi Spicy Tuna (he said the sauce was especially nice). I got the Green Goddess and Dakine hand rolls - both were insanely tasty. They used super fresh ingredients and the sauces were sooo good - the sauce in the Green Goddess had lemongrass and was insane! But the pineapple in the Dakine was amazing, I wish I had ordered more than one. I wish I had brought my phone to take pics as the presentation of the rolls were very aesthetically pleasing - a lot of care was put into them.The ambience is really cute - picnic tables under big trees and bamboo, it's a cute area for a food truck experience.We will definitely be back!! Great sushi, very overpriced tho. $40 will feed one person, not two, unless you just want a little snack before going somewhere else to eat a real meal. That said, the food is delicious and I live nearby so go here sometimes when I wanna splurge.  The vege options are about the same price as the meat options. I wasn't sure what to expect from this attractive-looking food cart off the main street in Makawao. The pricing for the food is significant considering that this is a food cart without table service, but the quality of the ingredients and the preparation techniques, do show quality and value. Personally I would rather eat these creations on regular plates. On to the food, Side salads to the rolls were fantastic with seagrasses and local vegetables. I had the signature lilikoi tuna roll and the Marlin roll both were good but I preferred the lilikoi tuna roll.  they have excellent vegetarian items on the menu. Fucking amazing. Most innovative and aesthetically pleasing design of a food truck I've ever seen. Their regular menu does not disappoint and their specials are always to die for. I love the quaint but beautiful and comfortable outdoor seating. Sometimes they serve seared venison sushi and poke bowls, which is highly unique and delicious. Satori offers the most fresh and local ingredients of any sushi place I've ever been to. If you're driving though Makawao or have a couple extra minutes to spare while in Pa'ia definitely go them out. You will not be disappointed! More...

I have a love affair with Satori! When I used to live in Kula at the start of Covid, I came almost everyday because it was one of the only places open for lunch. Morgan and the team are all awesome and really care about supporting local farms and sourcing true upcountry farm-to-table rolls, soups, and specials.
