Desmond and his team over at Legal Swine are amazing! They just did our wedding for roughly 200 people and every guest commented on how it was the best BBQ food they have ever had! The Brisket especially is unlike any you'll come across and the ribs are simply magical. Desmond was very hands on and so accommodating throughout the process. Don't be dissuaded by the BBQ either. He was able to make Vegan options that were out of this world. His Vegan "Pulled Pork" and the majority of his sides were hailed as the best anyone has had. Can not say enough good things about them as far as the food and more importantly as people. As honest and caring as they come. My wife and I also received some take-home plates which after a night of partying was a welcome sight the next morning. Use these guys, you will not be disappointed! More...

I was about to head to Dallas Hot Weiner's to grab some comforting weiners with everything on them for the long drive back to Boston.  My brother, a local, suggested I try this place out. To be honest, my expectations were set low as I have yet to find any good barbecue joint outside of Austin Texas. My expectations were set so low that I didn't even take pictures of the food - just a quick picture of the inside of the restaurant.I ordered a pound of moist brisket, a quarter chicken plate with dark meat and a half rack of ribs.The moist brisket was mixed with both the flat and point- not a good sign. The most cut, though, was very good. It's the best I have had in a long time.The chicken was good and the ribs were good as well - a tad dry but still good.I loved the condiments though as this chef had some good inspiration - kimchi picked. Let me just stop right there - wow!!!This chef certainly likes to use spices - like a choir boy in the 90's likes to steal quarters from the donation tray to use at the amusement center to play centipede. But I digress ...I will come back again the next time I am in that neck of the woods and I will demand a full pound of moist and will not take no or a slice of lean for an answer.A great hole in the wall surprisingly in a small town where it has no business being in. The BBQ here is excellent. I enjoyed everything. We had the "pig out Jr." which included ribs, chicken, brisket, sausage and pulled pork. All was very good. The ribs are saucy, but not too messy. Tender but still have enough chew. The brisket is 'cut with a fork' tender. The sausage seems to be house made and tastes a bit like Italian sausage. The chicken is moist on the inside and crispy on the outside. I usually don't eat chicken skin, but I couldn't get enough of this one. The pulled pork is moist, but could use a little sause, which is no problem as you are supplied with 3 choices. Carolina mustard sauce, spicy, which to me was a little thin, and sweet, which was my favorite. It also includes 2 sides, we had mac and cheese and coleslaw. The mac and cheese was good, but not great. The coleslaw, was not my cup of tea, but my father thought it was amazing. It's made without mayo, so if you're into that sort of thing, than it's perfect. It's low key, small and nicely decorated. The kitchen is open, so you can see and smell the food cooking. Our food came out fast and the service was very friendly. We will definitely be back.P. S. AMAZING!!!  Legal swine catered our very small wedding (16 people) and we are SO happy we chose them. The food was amazing, the meats all delicious, the sides were great, I thought the kimchi pickles were a creative addition and the portions were VERY generous. The ribs, brisket, sweet potatoes and the sauces were particularly popular. The delivery was punctual and easy, everyone was raving about the food the whole weekend. My sweetheart have been "road tripping" for years and have sampled BBQ most everywhere.  This is some of the best.  We ordered one 3-meat and one 1-meat combo plates with, all together, 4 sides.  Three sauces were provided but I used none; I wanted to taste the full flavor of the meats without "distractions."  The report:Ribs - The meat falling off the bone without overcooking to mush.  Nicely smoked without overpowering the flavor of the meat.  Moist, with the right amount of fat (the art of the pitmaster).  Absolutely perfect.  Excellent.Brisket - Soft, moist, again, without overcooking.  Again, nicely smoked without overpowering.  Just a bit more fat would have made it perfect.  Very good.Pulled pork - Generous portion!  Soft, moist, again with the right amount of fat without being greasy.  Again, nicely smoked without overpowering the flavor.  Very good.Chicken - Requested dark meat, received leg and thigh.  Medium sized, moist, tasty skin coating, again, nicely smoked without overpowering.  Thoroughly cooked (joint separates easily) without overcooking.  Very good.Sides - Beans and corn were good and different.  Coleslaw (without mayo) was tangy, vinegary, spicey, very good.  Mac and cheese was very good with lots of flavorful, gooey cheese .Sauces - Three:  S, M, Sp.  All were very different and all were good.  The S was thick and sweet, the M was sharp vinegary, the SP was thin, sharp vinegary and spicy.  Atmosphere - Small, few tables, lunch diner-like. Thank GAWD! This is the real deal with tender meat and a taste that says "yes-I-took-a-little-longer-to-cook-this." And, Hallelujah, they serve beef brisket along with pork and the usual NY BBQ regulars. This Texan-gone-north girl is very, very happy. The meat might be a touch salty but with both a sweet and a spicy sauce, you can easily mix your own particular blend of kick. My husband and I found Legal Swine while looking for BBQ for our wedding at a home in Saugerties. We cannot express how amazing they were on such short notice! !! We contacted the owner the Thursday before the wedding and he was flexible and amazing to work with. The food truck drove up right on time for dinner and they provided staff to serve our small wedding list of 50 people. Everyone was amazed by how cool the food truck at the wedding was and then they tried the food! AMAZING food!! Everyone was raving about the food and we thankfully had tons to bring home with us post wedding to enjoy at home. We literally just finished a take out party order and it was fantastic! The brisket, pulled pork, and ribs were standouts. Loved the cole slaw, corn bread, and Mac n Cheese too. Watch out, there is some kick to the cole slaw. The pickles and hot links are spicy for sure! We hope these guys do well. We'll be back for more. Excellent buy for the money. Ok, I rounded up, because I would say it's a solid 3.5 stars. I met my husband and a couple of his coworkers at Legal Swine, they've all been before. The decor is nice, "country" and "pig forward." I ordered the pulled pork with mac&cheese and coleslaw, my husband got ribs with baked beans and coleslaw. I didn't try the ribs, but my pulled pork was really good. What I didn't love was the white bread slices under my pork, and it was also under the ribs - it just seems to soak up grease and make the pile of meat look falsely large. The Mac & cheese was dang good, the baked beans were good, even the cornbread was good (and I am a harsh cornbread critic - hate when it tastes like cake). I will say that I didn't like the coleslaw at all - maybe if I had known it was vinegar based/"kimchi style" (NOT kimchi, don't want to misrepresent) it wouldn't have been so offensive, but there was no indicator that the slaw wasn't standard coleslaw. The pickles that they give you are spicy, they were fine. I really liked it, and I'll go back for sure!! It would be cool if they expanded their hours a little bit, but whatevs! More...

We've probably gone to Legal Swine a half dozen times since they opened their new location. By far the best BBQ in the area. Just tried the new Swinebono (their version of a cubano) and it was amazingly. I do my own BBQ, smoker and all, sometimes even begin with a sous vide, and Legal Swine puts mine to shame. Yumm ! I am one to complain but i didn't have one issue !! The owner was nice and very welcoming and was passionate about his business. The sauces, the brisket, pulled pork, baked beans, cornbread annd the mac n cheese ALL of it was delicious. And as a bonus they give you spicy pickles cant go wrong with pickles .! Im happy i stopped in because it was worth it ! Its my new favorite spot and i cant wait to try the rest of the menu!!! More...

My wife and I hired Legal Swine to do the food service at our wedding over this past Memorial Day weekend. Without a doubt it was one of the best decisions we made for our big day. For the quick reader I'll say owner Desmond Dutcher was very responsive throughout the process, the food was incredible, it got rave reviews from everyone I spoke to, and the team that came to help with the cooking and service was delightful. If you're in the Upstate New York area and are looking for a food truck service that specializes in BBQ for your wedding Legal Swine is the hands down best option and I highly recommend them.Now for the more invested reader looking for details I'll start from the beginning.We decided to do a fairly modest sized wedding outdoors. Guest list would be about 75 people and our budget would be a good deal below the average wedding. But we had plenty of ideas to make it a great day that our friends and family would love. We've been living in Atlanta for the past few years so we really wanted a southern style BBQ menu. The wedding food truck idea was settled on from the start. We didn't want to hire a caterer and we liked the idea of a family/buffet style so hiring a food truck vendor seemed the perfect fit. Early on I narrowed the search between a couple of options, then finally settled on one from the Albany region. A long story short, this particular vendor cancelled on a tasting not once but twice, the second time where my Mom had already made the trip to his house but he wasn't there. He got on the phone and was very aggressive and argued with her about being treated poorly and other nonsense. Needless to say he didn't have his professionalism together and our main option fell through. Now only a few months before the wedding I had a big problem to solve.My wife did some Facebook research and friends in the Saugerties area were recommending Legal Swine, saying the BBQ was excellent. There wasn't a lot of info online at the time, I don't remember seeing a full menu and we weren't even sure where he was located but we sent him an email and got the ball rolling.The owner Desmond, who is also an attorney hence "Legal Swine" understood what we were looking for from the start. He's travelled a lot in the South and I could tell he knew his BBQ. But there were a number of specific menu items I was hoping to have; a bite sized chicken and waffle with maple syrup, a bite sized pork belly and melon skewer to name a few, but these weren't items on his menu. Regardless he said he'd put them together for a tasting along with several of his signature dishes like his pulled pork, brisket, sweet potato's and mack & cheese. Not only did he drop off the tasting items to my family but he threw in a few items that weren't on his menu like his Kim Chee pickles. I think I had 6 or 7 total family members try the different items and not one of them was disappointed (and the pickles were a big favorites). Everything was coming together but I still had a slightly bad taste in my mouth from the earlier vendor that fell through so I had a chance to fly up to NY and meet with Desmond in person to finalize the menu and contract. We discussed the menu and finalized the little details but what I really wanted was to feel confident in my choice. And after the meeting I did.  I could tell he was passionate about Legal Swine, he was passionate about the food and he was honest. I finally felt that the food service for our wedding was in good hands. I can't understate how huge that feeling is with the wedding only a few months away.During the wedding the food was a hit. I heard nothing but compliments the entire evening, especially from a number of my Uncles. Everyone loved the cocktail hour items, most of which I'll remind were not on the Legal Swine menu. Since it was outside we had the food truck set off to the corner of our reception area. I feel like every time I glanced over I saw guests chatting up Desmond for advice. I had a handful of people grab his info for additional catering events. And, as a surprise Desmond slow grilled a HUGE, beautiful piece of Salmon for our head table. Everything that day turned out how we had hoped. The weather was perfect, our friends and family had a great time, and my wife and I were very happy. Worth the stop and better than another local BBQ place. I waited a few weeks since tradthey opened to try so the bugs would be worked out. So I ordered the brisket, pulled pork with man n cheese and slillet cornbread. Sauce of course is on the side if you would like. I must say impressed and found a new favorite BBQ joint to chase rather than stop in . Food was geat my only complaint is I prefer my cornbread more moist.
