Contacted Carleton about a week before my mother's Celebration of Life for food options. I was coming from out of town and only able to coordinate this over phone call and text but he was very helpful every step of the way. I wasn't sure how much food I needed for the event but I told her the expected amount of people and he helped me get the correct amount of food. We got to experience this amazing meat at FoodieLand. The ribs are the perfect consistency: tender but solid enough to stay a rib. The BRISKET. *drooling* The best I've ever had. Super tender. Carleton was responsive and provided a delivery of delicious brisket, Ribs, and pulled pork for sliders. Guests really loved the brisket, potato salad and Mac & Cheese. My goodness, do these folks know how to make some excellent BBQ! Our daughter's wedding was up in Foresthill, CA and Mr. and Mrs. Carleton and Renee Edwards helped make the day special with their incredible food, kind and prompt service and commitment to their customers. Our spread consisted of brisket, pulled pork, chicken, bbq baked beans, macaroni and cheese, potato salad and mixed green salad with dressing. We also provided our own rolls at our daughter and son in law's request (I highly recommend Hawaiian rolls with the pulled pork). Everything was incredible. We had enough for 130+ people and many came back for seconds. The brisket and macaroni were the talk of the town, with everything else being just as delicious. We would absolutely hire them again and would love to try some more of their offerings! Give their website a look~they offer so much! Ribs, sausage, pork loin and more, sides like southern style green beans and cabbage and apparently there are dessert options! I'm a very "finicky" BBQ eater, especially having eaten in some of the BBQ Mecca's in Texas and Kansas City. I will tell you this BBQ is top notch! Devil Dawgs catered a Fundraiser for TurnerLearningCenter. We selected pulled pork sandwiches, Mac and cheese and potato salad for 25 people. It was a huge hit, plates were hearty and no waste! I received many compliments on the food. Absolutely amazing desserts! My family has a sweet tooth and these desserts hit the spot. We tried the pecan pie cheesecake, butter pecan cake and lemon blueberry cheesecake - they were all the perfect balance of sweet, perfect. We have never ordered before but decided this year that we wanted to order a deep fried turkey for Thanksgiving. I would like to say it did not disappoint at all! The turkey was amazing. What’s your signature dish?
I would say we have 3. Our ribs are perfectly seasoned and smoked to perfection. We give you a choice of wet or dry ribs. Our Chicken is just to die for, with a hint of sweetness and a little spice. Our Brisket Rub makes a beautiful Mohogany bark. when sliced there is a great smoke ring and the juices just flow.
How do you go about creating the perfect menu for your clients?
The perfect menu will consist of what you want. We have several options available to choose from. This is your event, and we want to give you what you want.
What do you love most about your job?
I love the smile on someone's face after taking a bite of good food.
What inspired you to start your own business?
I was always told my cooking was so good I should go into business. Well, after moving back home and finding there are just not any real good BBQ places in our area. I decided to give it go. So far, it's been great.
Why should our clients choose you?
If you want the best, you ask for the best. There may be a lot of so-called BBQ caterers out there that make claims. I have learned from some of the best in Texas and Louisiana. I have taken that and made it my own. You will see when you try it.
What changes have you made to keep your customers safe from Covid-19?
We all wear mask and gloves when serving the public. We follow all CDC guidelines.
