Brisket review only. We are on a mission to taste the "best of brisket" from Texas to California. Stopped at Cranky Franks on our way out of Fredrickburg. Order at the counter and then seat yourself and eat. The counter was extremely slow this particular day, Saturday at noon. The line kept growing so we were patient knowing the brisket would be worth the wait.  The brisket here is a bit oily, not so lean but it IS moist. There was a little more fat left on the meat and this may have contributed to all the oil. I should have taken a photo of the paper bowl the brisket was in.  Overall flavor profile was good. Seasoned well and cooked to perfection. Nice smoke ring, pink center, not over cooked, definitely not dry. I'm not certain if they make their own sauce but it was thinner than I'm used to. Too much and your bread can become soggy. Use sparingly. Who likes soggy bread?We didn't order side dishes as we were just there for the brisket tasting. More...

Some of the best brisket I've ever had. I ordered the brisket and sausage. Sausage was good nothing special, but that brisket will haunt me. Watching them effortlessly cut through the entire hunk of meat sort  like butter was a thing of art. I'm assuming the guy running the show (running register , carving meats , giving cups for drinks ) is the owner. He was super friendly and made us feel welcomed. Oh man, I finally found a way to get here before you sold out!  The man doing the carving (I hesitated to ask if he was 'Cranky Frank') was really friendly and helpful!  Said tough to predict but said 2P is usually when he sells out so consider being warned!Your marbled brisket and St. Louis cut ribs have just replaced that Q house in Llano for me! Cranky Frank's has been a staple BBQ place near Fredericksburg for decades, and although family members have eaten there many times, I had not. They told of lines waiting for the doors to open at 11, and ribs being sold out by 1. We arrived about 1:30 on a Wednesday, and there was still considerable local traffic in the place. When you get out of your car, the distinctive BBQ odor permeates the area. But, as warned, they were out of ribs. Their sliced brisket was juicy, tender, and easily cut with a fork. Just used a little of the original sauce for extra flavor. Potato salad was more of the German-type. Coleslaw was decent as well. However, the banana pudding was below average. Like many BBQ joints, you line up and tell the person who's doing the slicing what you want, then you get a plate with your food and pay for it. Then go get the 'fixins," and find a place to set, or take it out. Excellent BBQ that's worth a trip if you are anywhere near Fredericksburg. More...

My BBQ ribs experience at other places has always been that the ribs were good but not as good as mine. I had the basic chopped brisket sandwich with potato salad. Huge sandwich. Good meat, just the right BBQ smoke flavor. The bun is not a traditional hamburger bun but instead a wonderful, soft bun that really soaked up the sauce. I'd go again next time I'm passing that way. One  negative-word of warning ladies-don't go in the restroom!  I wonder how the health department can keep them open with that restroom! There was mold growing on floor and wall and floor was sticky and slick at same time. There's even a sign on door saying be careful of slippery floor. We drive from San Antonio to eat at Cranky Frank's. It's the closest thing to the BarBQue I grew up with. Make sure you go early. We were there about 1:30 and closed the place down when we finished at 2. (They serve until they run out) Enjoy great BarBQue !!! More...

The food is still great! They guys working the counter need to step it up! No one bothered to answer the phone for a to go order to be placed.
