We tried Casa Caliente last night for the first time, and I'm glad we did.While I wasn't blown away by any of the salsas, I did enjoy the "Triple Dipper" appetizer, which came with large bowls of queso, bean dip and guacamole. The guac needed a bit of salt, but it was of good quality and fresh. They also have nice, thick tortilla chips to hold up to all these tasty dips.My husband and I shared a #3 combination dinner, which came with a chile relleno, a beef and bean burrito, and a cheese enchilada, all served with rice and beans, lettuce and sour cream on top.  We had planned on splitting the entree and having one of their brownie sundaes for dessert, but the meal was so large that got too full, unfortunately. Next time!Service was great, no wait to speak of on an early Tuesday evening, and our 2-year-old ate for free with purchase of an adult meal (Sun - Tues), so that was a bonus. She had the cheese quesadilla and french fries, if your toddler is curious. Both were exactly what you'd expect for a kid's meal, but I think it is cool that they also bring the little ones a churro for dessert!Oh, also-- they have Diet Dr. Pepper--- always a plus in my book. This family owned business has a great menu of all you would expect out of a mexican restaurant. Loved the three types of salsa served with chips!  I had the chicken enchiladas, refried beans and rice and cleared my plate. I visited for the first time a couple weeks ago and it was exactly what I was expecting. The atmosphere was warm and welcoming and I enjoyed my time there. Went Sunday afternoon.  We were greeted by one of the best waitresses that we have had in a long time. This is our favorite Mexican restaurant. We are a family of 5 with 3 boys (7,5,2 years of age).The owner always stops by our table to make sure we are doing well and interacts with our kids.  We went there this past Friday night and Highlands Ranch Fire Department was there. My 3 boys were encouraged by the owner to go say hi to the fireman. My boys were so excited! It was like meeting an Avenger:).The food and margaritas are excellent! This was my families first time at Casa Calente Restaurant and the food was excellent and so was the service. The best was getting to know Tim the owner. Tim took his time to get to know his customers and share his knowledge, which I found very interesting. The customer's that were even at the restaurant were a lot of fun. What better way to end the week than with fresh mexican food?NOTHING!After our final walk through before purchasing our home, we were in need of margaritas. LOTS of margaritas - mainly for me, as this is the largest purchase EVER. Being that we are now in the burbs and I'm used to the city life, I used my Yelp app to find this little gem, and glad I did.Although many of the other reviews aren't all that good, we had an entirely different experience.6:45pm: Entered the establishment and greeted by a young hostess. Although it seemed she was getting ready to leave for the evening, she said someone would be right with us to get us seated.6:50pm: Greeted by another employee who promptly sat us at a booth by the bar.6:55pm: Our server came over, gave us the run down on the specials, history of the business and promptly took our drink order before returning with homemade chips and a trio of different salsas!. (Everything is homemade, including the tortillas and the chips!) 6:59pm: We browsed the menu before our server approached us again, requesting a few more minutes. The menu is extensive, offering breakfast all day, and features so many different things! 7:03pm: Finally decided on splitting the enchiladas (cheese, chicken and pork!), to which the server was complimentary of, and waited for the goodness to arrive!7:10pm: Another drink is needed!7:20pm: Our food arrives! Because the portions here are HUGE, we opted to split a meal, and so glad we did! Our meal was large in size and in flavor. I always love a good rice to accompany any meal, and it did not disappoint! The cheese was gooey and the pork enchilada was by far my favorite, as the meat was tender, juicy and had soaked up some flavor!7:45pm: Our bill arrives, is paid promptly and returned! Staff sure knows how to get the job done quickly and efficiently, without making you feel like you have to leave right away!This place seems to be a locals favorite, as it was decently full for a Thursday night. Awesome food. The black beans are fantastic. I tried this restaurant because I'm new to the area (Line Tree) and like good Mexican food. Came here randomly for lunch and got the lunch special: Taco Tuesday, with purchase of a drink get two tacos for $4, plus $1. 50 for beans and rice.I picked a tea plus chicken tacos, one soft one crunchy. I preferred to add some salt but after that it was really yummy. It was out fast! Served hot, fresh, plus they brought out great chips and a trio of salsas. The service was great, as usual. Maureen is the most amazing waitstaff person. She is so attentive and knowledgeable she makes the experience worth coming back for.  She let's us know the specials of the day and comes back frequently to check on us and our salsa refill needs lol which are high. It has been almost thirty days since we visited your establishment and my family is still talking about how good the food was and the service was outstanding. I specifically was looking for a place that served "Colorado Green Chili" and that offered the "wet' or smothered burrito. I used google maps to find you. Everything we ordered was cooked perfectly and tasted amazing. The "chips' served with the salsa are addictive. Wish you had a location near us in Virginia because we would be there weekly. My son wants to know if you would consider sending an order to Virginia...I tried to explain it would not be as good after being shipped but he thinks that it would still taste better then what we have found any place else.
