Perfect every time!Of the few times we have run across the oysterman we have never been disappointed or bummed. Always quick with friendly conversation while working the knife. This time we cought him at the Capitol Art and Wine Festival. Once again with the freshest of oysters and a good variety of sauces that go with. Not that these sweet ones need anything on them. Bill the Oysterman is the Bomb, a really nice guy. Both of them are very nice, I came to his stand in Santa Cruz and realized that I realize that I didn't have cash on me, they guy trusted me enough to let me mail him a check. I just couldn't wait to pay him back and tell him how grateful, for me it was al about the gesture. I went to an ATM that same night and gave him the money. As others have noted, he drives a crazy white van with oyster mascots on the side. He shows up to your venue with some fresh oysters, and various sauces to accompany them. He has a huge bed of ice and away he shucks. They oysters are so good they really actually dont need the sauces but hey, variety is the spice of life right? More...

Parker from Bill the Oyster Man came to serve oysters at my wedding.  All of my communications leading up to the wedding were with Bill.  Bill was great to communicate with over email and always answered my questions in a timely manner.  I wanted to have oysters at the wedding as a surprise to my husband because he proposed to me over oysters in Tomales Bay.  The oysters were a hit!  With my husband and with our guests!  Parker shucks all of the oysters on site, and there were 4-5 different kinds of sauces for the oysters.  Parker even put aside a few oysters just for my husband and me.  The price was also really great, better than any of the other companies I contacted.  Plus, it included the service fee and tip.  I would highly recommend booking Parker or Bill for your next special event. I should have written this review last year; I only just thought of it because I referred him to some friends.  I had Bill come to my house in Marin in mid-May, 2011, when my second family from Bombay was visiting the U. S. for the first time.  I've been a guest at their house numerous times over the years, participating in a bunch of weddings and attendant festivities, so I really wanted to reciprocate with an "all things California" party to introduce them to my family and friends.  We had artichokes stuffed with Dungeness crab, Calif. wine and champagne, Cowgirl Creamery cheeses, etc. -- but BY FAR, the hit of the night was Bill the Oyster Man.  He set up a gorgeous oyster bar, complete with ice and seaweed, and opened oysters (Miyagis and Kumamotos) all night long, until they were all gone.  I can't recall how many dozen we had, but it was A LOT -- and the price was very reasonable.  We took his recommendation as to how many oysters we should have for the two dozen guests, and I think at the end of the evening, he only had to open the last 6 or 8 for me to put in the 'fridge to have the next day.  In other words, I didn't get too many!!  And I think at least a dozen people told me over the next week that they not only loved the oysters, but learned a lot about oysters from him, too, and they loved that end of it.  All in all, I'm looking forward to having him at another party in the spring sometime, because if I don't, I'll never hear the end of it from everyone who was there in '11!- Nancy More...

If you love oysters you must find Bill the Oyster Man!  He is at C.B Hannegans in Los Gatos every first Sunday of the month from 12 to 4 and shucks them as you order. Has a great selection of fresh oysters and sauces to put on them!  Went this past Sunday with a group of friends and it was an amazing time! Tried clams on the half shell and while they were fresh, not for my pallette but tons of people love them. Bill the Oysterman is THE BEST!  I first met him a million years ago when he shucked oysters at the LG Farmer's market.  I had no idea how good an oyster could taste at 9:30 in the morning until I decided to join the crowd at his oyster bar and slurped a few down.  Mmmm, mmmm, good.  From then on I forgot about spending money on organic veggies and fruits and made a weekly trek to his oyster bar to spend my market money instead.Eventually, Bill stopped going to the Farmer's Market and my Sunday morning breakfast reverted back to more traditional yet less tasty fare.  But alas, years later I reconnected with the King of Oysters at a Rotary event and found out that he shucks for hire at parties.When I opened my hat store in Los Gatos, I hired Bill and I am so glad I did.  Bill is a party - even without oysters.  He now shucks oysters at all my store events and he is a huge draw.  I can't say enough good things about him and his crew.  Aw shucks, Bill is a pearl.... In the words of my friend that graciously introduced me to Bill one fateful day, "Bill is not only an Oyster Man that provides you oysters, he is an entertainer! " I booked Bill for an engagement party that I had about a month ago and he set up his display station with ice and all the oysters and sauces in my backyard. I had about 100 guests that evening and ordered about 600 oysters -- just the right amount actually, not too much, not to little since some guests were allergic to seafood (poor souls). I could not have asked for a better experience with Bill. He was the talk of the party and all my guests enjoyed him, not only because it's a great little extra idea to have for a party, but because Bill himself was so friendly, entertaining and beyond helpful! He gave me an extra extension cord from his truck so my ice sculpture's backlight would work and knew my bartender as well (what a small world). Bill grows his own oysters so offers a wonderful rate and he's so very knowledgeable about oysters, you can tell he knows his stuff and willingly shares it with all the guests at your event. He's a superstar shucker and kept the oysters coming at a great pace and as a treat at the end of my night for my special occasion party, he saved 20 really special oysters for me and my closest friends that were so high quality, it was like heaven melted in my mouth. Also, oyster shots are a must-do for any parties where Bill is. Vodka mixed with some oyster sauces and a freshly shucked oyster and you're bound to have a great time. Look I can't front. Oysters are strange. This place is strange. Or should I say what they do is strange. Bill sends out a sexy little Cruz girl and about 1000 oysters to your event.
