Acadiana Manna is a catering business that has continuously grown through referrals and repeat clients. We were voted the best caterer in West St. Tammany Parish for 2020! We offer custom catering to fit the needs of our clients. We have served clients on the north shore and in New Orleans and Metairie as well. We have also catered several events in Baton Rouge.

What’s your signature dish?
Charcuterie Boards. Our boards are a work of art and definitely a show stopper. Our gluten free Shrimp Étouffée is very popular as is our Chicken & Sausage Gumbo, Chicken Fricassée, and Eggplant Casserole. Our seasonal dish of Merliton Casserole is also a crowd pleaser.
How do you go about creating the perfect menu for your clients?
We visit with our clients to ensure we are creating the best options for their needs.
What do you love most about your job?
I love Thanksgiving. My memories of family gathering to share their favorite dishes are warm to me. When I am asked if I get tired of cooking, my response is every day is Thanksgiving day for me. I get great satisfaction when we get feedback that our guests loved whatever dish reminded them of family.
What inspired you to start your own business?
I was a banker for 35 years. During that time, whenever there was a disaster, my wife, Clela and I would prepare food for those less fortunate whose homes may have flooded or received severe damage. When Hurricane Harvey hit Houston, TX, she and I decided to go there and cook. 3,300 meals later, exhausted, we felt like we made an impact on our neighbors in TX. When the bank I was working for was sold, Clela and I decided to step out and make a difference in our local community. Acadiana Manna was born July 19, 2018.

The first products we offered were prepared Cajun meals stored in commercially vacuum sealed bags. We freeze the meals and ship them nationally. What changes have you made to keep your customers safe from Covid-19?
We maintain a clean environment. We are a store with a state inspected commercial kitchen. We take Covid-19 very seriously.
Custom Charcuterie Boards
Always a favorite of all guests. Acadiana Manna's Charcuterie boards are very often photographed and attract a crowd. Guests enjoy an assortment of cured meats, cheeses, nuts, fruit, and breads. Often we incorporate a touch of personal/professional hints that draw attention to our clients interests.
Grab and Go meals
Fully cooked meals ready to heat up and enjoy. Better than restaurant food, (in our opinion). Each bag of meals will serve up to four servings, (depending how Cajun you are)!
Corporate Catering
Whether the board room or conference room, we've catered meals for directors and sales professionals.
Parties, Weddings, Receptions, Showers, Fund Raisers
Our business fits very well with Parties, Weddings, Receptions, Showers, and Fund Raisers. We've catered live events up to 350 guests and we've prepared 1,200 meals for employee gifts.
Disaster Recovery Meals
In 2021, Hurricane Ida struck the Louisiana coast. We were asked to prepare meals for families impacted. Within 24 hours, we were preparing hot meals and in a 5 day span, we were able to deliver 8,000 meals to Baton Rouge, Metairie, New Orleans, Mandeville, and Covington, LA.
