We had hired gun cater the food for a wedding. Brian and his crew are amazing. Everything was cooked on site so it was fresh and piping hot when served. Have been to events with many different catering companies and hired gun has been best by a “long shot” no pun intended! Brian and his wonderful crew just served our wedding guests some of the most unique and delicious dishes they've ever had.
The light appetizer menu offering sounds like the portions might be a little small, but servings were more than generous and we loved the variety this gave our guests. I heard compliments on just about dish -- creamed corn with a kick, pickled asparagus, queso, fried okra (all got eaten), corn poppers, glazed link sausage, smoky chicken salad, brisket sliders, pulled pork tacos, the list goes on. Oh and we asked Brian for steak and chicken strips "for the kids" and all ages kept going back for them and the peppercorn gravy.
Brian was very flexible, professional, reassuring, and confident. We now know this is because he heads a fine company. His staff is wonderful. They were efficient, attentive and thorough.
There was an oversight on my part that caused a change to the floorplan of the serving area. Marshelle who handles the setup and decorating, quickly found me and adapted to the situation. She has a real eye for decorating and staging the food, and everything couldn't have been presented better. She gladly integrated some antique linens and silver pieces I provided. All of the staff were lovely to work with.
Can't stress enough how flavorful and unique the dishes were. We highly recommend Hired Guns. Brian puts on a high quality show whether the crowd is small or larger like ours (150 guests). Thanks again Brian.

As head of the Midlothian Wrestling Booster club we hired Hired gun to do our catering. We were so happy with the services of the entire crew. Brian was upfront and very professional in all aspects of our banquets. There was a few moments when I worried if we had enough food because we had a few guest show up that wasn't in our food count.
