HOW TO FIND GREAT AMERICAN BBQ: The Top 3 things you should look for 1. Can you actually smell smoke? 2. Can you see a stack of real wood anywhere? 3. Can you see a wood fired smoker sitting out the back? Sethros Texas BBQ ticks all the boxes ... Seth Mooney and Jodie Ryschka are a great team serving up Authentic central Texas style BBQ ... For me this is what a real BBQ platter is ... the pork ribs had beautiful smoke ring deep mahogany colour with a subtle sweetness. The rib was super juicy but not falling off the bone - one bite and the meat came off the bone clean and tender The beef rib and brisket both had beautiful bark. The fat was rendered out well with so much moisture. The brisket held up under its own weight (bend test) but with the lightest tug it would melt apart. The brisket flat was just as moist and tender as the point - AMAZING! The home made Sausages NEXT LEVEL: Pork, Jalapeño and cheddar... great texture on the meat with a little bounce love the little pockets of melted cheese throughout the meat, the subtle heat from the jalapeños. Next time il ask them not to cut the sausage I love the snap of the skin when you first bite into it and it bursts with flavour. This is some of the best BBQ Ive ever had .. nothing is smothered in heavy sauces.. The most amazing quality and authentic bbq I have had in Australia. This cannot be beaten. All the rest should bow to the pit master here! Phenomenal service as well.
