What’s your signature dish?
For hot fork buffets we do an amazing lamb tagine, spicy giant cous cous, raita and griddled flatbread. Our canapé selection is an amazing selection of bite size tasty food - beetroot macaroons with goats cheese mouse, chicken liver parfait on toasted brioche and spiced pear chutney, home cured beetroot gravadlax on sameshi rice with pickled ginger and wasabi dip - to name a few. Sit down dinners feature a vast array of unctuous flavours - 6 hour braised featherblade of Welsh beef, slow cooked pork belly with a honey and 5 spice glaze and finishing with warm chocolate fondant or a zingy citrus tarte with bitter chocolate truffle - some of my favourite things!

To bring restaurant quality food to events
Capital Cuisine have been at the cutting edge of pop-up restaurants for some 13 odd years, even before ‘pop-ups’ were thought of and someone made them trendy!

We have been putting a huge sit down restaurant at the Hay festival for all this time and it goes from strength to strength each year, quickly followed was the main and only sit down restaurant at the National Eisteddfod, where we now have some 300 seats plus a coffee shop and 100 seat function room – all of this in massive marquees in a field complete with fully functioning kitchen marquee with cookers, refrigerated storage and even dishwashers! A spell at the Royal Welsh Show for the last 4 years has also seen us ‘popping up’ in Builth Wells with similar restaurants.
