 Preparation of SOPs, working out for cleaning schedules, staff training (kitchen, service).
 Ensuring Food Hygiene and Sanitation SOP’s at all production areas, dishwashing utilities, receiving and storage areas
 Conducting Supplier audits

► Monitoring routine tests like
● PLATFORM TESTS like - Organoleptic analysis, Clot on Boiling (COB), temperature etc.
● STANDARDIZATION TESTS like - Fat% analysis by Gerber method & MILKO TESTER, SNF% analysis by Gravimetric & Specific Gravity methods, homogenization efficiency by creaming index method, insolubility index of SMP, detection of moisture content of SMP etc.
● CHEMICAL TESTS like - Alcohol - rezarsurin, acidity % by titration method (milk, curd, sambharam, ice cream, cream, SMP etc.), testing for neutralizers, preservatives and adulterants, estimation of protein content, phosphatase test etc.
● Microbiological Tests - Methylene Blue Reduction Test, MPN test, staining, direct microscopic count, somatic cell count, Delvo-test (Agar diffusion Method), Plating – Coliform analysis, Standard Plate Count, Yeast and Mold Count, and Confirmatory tests using selective media.
● Water Analysis - Determination of chloride content in drinking water, detection of available chlorine in water, checking total hardness of water, pH, turbidity etc.
● Preparation of starter cultures - for yoghurt and testing its Activity, Acidity and MBRT etc.
► Packing machine monitoring for hygiene, exact sachet weight, temperature, proper sachet sealing, date stamping etc.

► Monitoring the functions of pasteurizers, homogenizers, chillers, cream separators, compressors, ice block tanks, cold rooms etc.

► Attending customer complaints and rectifying them
