Job Description/ Responsibilities
REPORTS TO: Executive Chef
PURPOSE AND RELATIONSHIPS:
Provide functional assistance and direction to the Pastry & Bakery operations. Interacts with individuals outside the hotel including, but not limited to, clients, suppliers, government officials, competitors and other members of the local community. Coordinates functions and activities with certain hotel department heads and Food& Beverage departmental heads.

RESPONSIBILITIES:
1. Supervises day to day functioning of pastry & Bakery Employees.
2. Controls and analyses, on an on-going basis, the following:
a. Quality levels of production.
b. Guest Satisfaction.
c. Merchandising and marketing.
d. Operational Costs
e. Sanitation, Cleanliness & Hygiene.
f. Menu Planning for high Seasons.
g. Scheduling staff
3. Responsible for the production, preparation and presentation of all pastry and bakery items to ensure highest quality at all times.
4. Establish and maintains effective employee relations and inter-departmental working relationships
5. Develops formal training plans and implements on the job training sessions for pastry and bakery employees..
6. Works with Materials Manager in determining the minimum and maximum food par stocks. Ensures the completion of the market list in accordance with IHC quality and quantity standards. Inspects all perishable pastry items received for quality.
7. Attends daily F& B Briefings..
8. Performs related duties and special projects as assigned.
