During my time at Le Lion D'or I managed a team of people, running all aspects of the champagne
bar, delivering exceptional customer service. I was the named licensee and grew the business to be
one of the most profitable & successful of the 12 or so licensed houses in the Golden Lion Group.

I started on the QE2 and was promoted though all classes to providing Silver Service in the "Queens
Grill" Restaurant, the highest class dining room for Penthouse Guests. I passed the basic sea survival
course, obtained a safety / fire-fighting training certificate and a Steering certificate. I was given the
Customer care award and the Silver pin customer care award.
I managed a station of 18-20 dedicated guests for up to 3 consecutive months with a partner in the
Queen's Grill, serving breakfast, lunch, afternoon tea & dinner as well as managing cocktail parties. I
was responsible for all a la carte orders and service. I had personal responsibility for silver & china
inventory. I maintained hygiene standards to UK & US public health regulations

I Co-owned the businesses with my partner, which we built from scratch, selling the first one in
January 1988 and setting up another in September 1988. We obtained a listing in the Michelin Guide and the Egon-Ronay Cellnet Guide.
I co-managed the business in conjunction with my partner who was the chef. I was personally
responsible for all of front of house aspects including the management and training of staff. I was
also the assistant to the chef in food preparation.
