I been through an intensive 1 month course at The South African Breweries, learning the different types of beers and the taste profiles and characteristic of the different brands. as well as the flavour that are regarded as off flavours.

Operating and Process Control
Operating the brewing and associated process areas according to the
work instructions, supporting the plant control system and verifying
that process control is being maintained.
Constantly reviewing process performance against target, and recording
short stops. Where process performance does not meet target, or trends
indicate the existence of problems, corrective action must be initiated.
Recording waste on the appropriate documentation or information systems,
and reviewing waste trends to identify problems or opportunities

When problems occur, applying the appropriate techniques (e.g. 5Y, quick
fix routines, etc.) to identify and correct the problem.
Where Brewing Technician Artisans are unable to resolve the problem,
involve fellow team members or escalate to the team leader if necessary.

Yeast Propagation For Redd's
I was involved in producing a nurturing the strain of Yeast to be used for the fermentation of Redd's Dry and Cold. I was involved in the entire process of the project from the charter to the implementation.
