I have worked as a chef for the past ten years, in a wide range of roles from a commi chef to Running various outlets at Skycity, from Bellota where I planned the menus, as well as maintaining food costs and training staff, to helping run a very busy outlet on the main gamming floor, to function menu planning, and menu planning in Skycity's sports bar Nations club rooms.

Was responsible for the daily running of this outlet, which supplied food items to a number of other Bars as well as the poker room and Nations, as well as hosting Functions in the Xo room and other outlets, duties the same as when in Bellota, as well as planning function menu with the head chef main gamming floor Graham Young.

In my role as chef de partie, I was responsible for the daily running of the outlet, from menu planning, maintaining food costs, ordering, training staff, checking and maintaining sky citys health and safety policies, writing the recipe cards etc...



May 2004 - April 2007

Worked on the cold larder, dessert section at first, responsible for maintaining the section, prep items for service, contribute to the menu, and the safety and hygiene of the section. Finished up there as a senior chef departie on the hot entrée section.
