I transferred to the Swallows Return when it opened from the Oystercatcher. Duties as Kitchen Manager were to manage a team of ten chefs and responsible for stock control, staff rotas, food quality, kitchen hygiene and discipline. As the District Chef the responsibilities involved training in all aspects of the kitchen and training for new menu roll-outs and carrying out Food and Hygiene Audits. As the Accredited Chef for Vintage Inn I was working closely with the Menu Development Manager of Vintage Inn and carrying out other projects for the Food Innovation Team at Mitchell's and Butler.
