Planning menus and estimating food portions/rations for restaurant at the lodge and for catering requirements; ordering adequate food and kitchen supplies; food preparation, including full breakfast, lunch, and dinner service, as well as preparing dishes for those with food allergies or intolerances; managing kitchen operations and train/supervise kitchen staff; maintaining kitchen area/equipment clean and ensure proper handling/freezing/preservation of food according to hygiene and safety regulations & proper process; maintenance of a food & room supply inventory; manage invoices and accounts for Lodge operations; supervise room and Lodge maintenance and housekeeping staff; perform room bookings.
Since my arrival in Pangnirtung, the Auyuittuq Lodge has acquired an excellent reputation for exemplary cuisine, service and hygiene. Net revenues at the Lodge have increased substantially in proportion to the improved & efficient service offered to clients.
