I am a qualified chef with city & guilds 706/1 & 706/2. I have over 20 years cooking experience including a la carte, buffet, table d'hote & set menus. I have extensive experience in Christchurch restaurants & cafés from 1986 to 1990 when I moved to Havelock North in the North Island where I successfully leased a restaurant in the Havelock North Tavern. In 1991 I travelled to Europe and worked in a café in Brugge, Belgium and then for sutcliffe catering services in London. From 2001 to 2005 I managed the catering for a brand new café just built on to Upper Reach Winery in the Swan Valley, Perth, Western Australia. This included setting up the establishment with new catering equipment, writing and implementing new menus for the a la carte lunch service and a range of function menus for weddings, birthdays and local festivals. I was responsible for the complete running of the kitchen including menu design, food and labour cost budgeting and hiring and training of kitchen staff. In 2011 I graduate from Waikato University with a Hospitality teaching diploma and have since been teaching hospitality & food technology in Christchurch secondary schools.
