*** Pre-Wedding Review (will edit)***So far our experience with Mike and his lovely wife from Swamp Daddy's BBQ has been wonderful. They are a diamond caterer & I am so grateful to the universe for sending them my way. Mike is professional and that's only the tip of iceberg. He is kind and willing to work with you on a custom menu to fit your event's style and budget. My fiance and I both went on the caterer hunt in a frenzy - we both work a ton and are planning our wedding in 9 short months. Our venue is super strict with ALL vendors so I had a list and was calling places off the hook, my organization was not at it's best. Originally on the phone with Mike I thought he was actually a different catering company, and I go on and on asking for the whole formal Tri-tip with potatoes and veggies typical wedding food deal. He doesn't even skip a beat, he says he specializes in BBQ but he can do traditional plated as well. His work history is extensive and he's very knowledgeable to what you need and want at your wedding/event. Moving on to our tasting with Mike and his wife, OMG. For our weekend of tastings, my fiance and I had each choose our favorite caterer and scheduled a tasting. This choice was supposed to be based on price & how we got along with the caterer since we'd be working with them as a person for the upcoming months. My fiance scheduled his tasting Saturday with another big wedding caterer, and don't get me wrong: it was good, BUT it wasn't great. It was wedding food, and I couldn't complain. My fiance swore on everything he'd found our caterer and was certain I couldn't have found anything better. He even went as far as saying we should just sign with them & not waste anyone else's time. I stuck to my guns knowing Mike was blow it out of the park. What a rude awakening my fiance was about to experience in the best possible tasting way. Mike showed up on time to our tasting conveniently at OUR house on Sunday, we were late a couple minutes and he was totally chill and down to earth about it. The tasting was for my fiance, my future father-in-law (who is the pickiest person alive, he's owed restaurants in the past), and me. These men were BLOWN away just like I knew they'd be. MY future father-in-law was obsessed with the shrimp appetizer, he literally grabbed from the extra appetizer plate to have seconds before anyone else could. My fiance who had been so proud of yesterday's caterer completely forgot the other company existed, he was savoring the prime rib dish relating how juicy and tender it was. Mike had cooked it to PERFECTION.My personal favorite, just cause I'm a sucker for starch, was the horseradish mash-potatoes. Literally an explosion of flavor, my anticipation for dinner at the wedding is growing and growing just writing this review. Â Let me tell you: this is NOT your typical wedding food. This is above and beyond. I have FULL CONFIDENCE in Mike and his team to deliver at our wedding in December. My bridal party and I literally talk about how excited we are for the food ALL THE TIME. Beyond being an amazing professional and an outstanding cook, Mike is also easy going and wonderful to get along with. Super nice owner and great tasting BBQ. Â I was slightly bummed the chicken was on the bone, but that's my own fault for not inquiring beforehand. Â The meals come with tons of food, salad and rolls included, as well as water, tea, and lemonade. The salad was just a package of spring mix, two new (unopened) salad dressings, bag of croutons, and bacon bits. Â Honestly, if I would have known that's what the salad was, I would have preferred a discount rather than getting that option. We hired Mike to cater a baby shower, party of 40. The food was delicious! Everyone loved it. Mike did get it there exactly at the time agreed upon. However, I was told they provided everything, utensils, drinks etc.. I did not need anything else. I wish that had been true, we were left with out napkins, or utensils for serving the beans, potato salad, or green salad. He did leave forks and knifes, serving beans with a fork was interesting. I also regret not providing my own drinks. What he left was supposed to be pink lemonade, and tea. They were both lukewarm, and lemonade was flavorless. Hands down the BEST BBQ around. From the moment we first talked to Mike about catering our wedding he was nothing but amazing. The tasting we did he brought so my food we had left overs for days & it kept getting better & better. He became more of a friend then someone we hired to cook us food! He even helped find us a tent when the weather called for rain on our wedding. He was so great people you won't be let down!!! I work for an endodontic office in Orange and Swamp Daddy was a treat to us from a patient we saw. As soon as it came in the door the aroma of smoked meat filled the air. Our signature dishes include our slow smoked brisket. We specialize in BBQ and Cajun.
How do you go about creating the perfect menu for your clients?
Our owner is a trained executive chef and is able to customize any menu as well as type of food. We have a very professional staff that is attentive to every need. We request our brides and grooms to have a tasting appointment with us so we can craft a delicious menu based on what their needs and likes are.
What do you love most about your job?
We like to make our food an experience. We believe that all guests should leave an event talking about how amazing it was. I love that we always here how months later guests are craving our food.
What inspired you to start your own business?
I am a trained executive chef graduating from the International school of culinary arts. After graduating I moved to Louisiana and learned the art of cajun and southern bbq food. I started my own business because I want to provide all of my patrons a delectable experience.
